Ingredients:
- Mutton mix boti 500g
- Namak (Salt) 1 tsp or to taste
- Adrak lehsan paste (Ginger garlic paste) ½ tbs
- Water 1 Cup or as required
- Sabut kali mirch (Black peppercorns) 1 tbs
- Zeera (Cumin seeds) 1 tbs
- Badi elaichi (Black cardamom) 1
- Hari elaichi (Green cardamom) 2-3
- Darchini (Cinnamon stick) 1
- Laung (Cloves) 2
- Jaifil (Nutmeg) ¼ piece
- Javitri (Mace) 1 blade
- Hara dhania (Fresh coriander) chopped handful
- Pyaz (Onion) 1 medium
- Hari mirch (Green chillies) 6-8
- Adrak (Ginger) 1 inch piece
- Lehsan (Garlic) cloves 9-10
- Water ½ Cup or as required
- Dahi (Yogurt) whisked 1 Cup
- Cream ¾ Cup
- Cooking oil 3-4 tbs
- Cooking oil 2 tbs
- Namak (Salt) ½ tsp or to taste
- Lemon juice ½ tbs
- Kasuri methi (Dried fenugreek leaves) 1 tsp
- Koyla (Charcoal) for smoke
- Hari mirch (Green chilli) sliced
- Hara dhania (Fresh coriander) chopped
Directions:
In a wok,add mutton,salt,ginger garlic paste & mix well until it changes color.
Add water and mix well,cover & cook on low flame until 3/4th done (approx. 35 minutes) then cook on high flame until dries up & set aside.
In a spice mixer,add black peppercorns,cumin seeds,black cardamom,green cardamom,cinnamon stick, cloves,nutmeg and mace,grind to make powder & set aside.
In a blender jug,add fresh coriander,onion,green chillies,ginger,garlic and water,blend well & set aside.
In a bowl,add yogurt,cream,blended mixture,ground spices & mix well.
Add cooked mutton & mix well,cover & marinate for 30 minutes.
In the same wok,add cooking oil and fry marinated mutton pieces on medium flame from all sides until golden brown & set aside.
Reserve remaining marinade for later use.
In the same wok,add cooking oil,add reserved marinade and bring it to boil,cover & cook on medium flame for 4-5 minutes.
Add salt,lemon juice,dried fenugreek leaves & mix well.
Add fried mutton & mix well,cover & cook on low flame for 4-5 minutes then cook on high flame until separates.
Turn off the flame and give coal smoke for 2-3 minutes.
Garnish with green chilli,fresh coriander and serve with naan.

Directions:
Karahi mein mutton,namak aur adrak lehsan paste dal dein aur rang tabdeel hunay tak ache tarhan mix ker lein.
Pani dal ker ache tarhan mix karein aur dhak ker halki ancch per ¾ th done hunay tak paka lein (approx. 35 minutes) phir tez ancch per sukh janay tak paka lein & side per rakh dein.
Spice mixer mein sabut kali mirch,zeera,badi elaichi,hari elaichi,darchini,laung,jaifil aur javitri dal dein aur grind ker ka powder tayyar ker lein & side per rakh dein.
Blender jug mein hara dhania,pyaz,hari mirchein,adrak,lehsan aur pani dal dein aur ache tarhan blend ker ka side per rakh dein.
Bowl mein dahi,cream,blended mixture aur ground spices dal ker ache tarhan mix ker lein.
Cooked mutton dal ker ache tarhan mix karein aur dhak ker 30 minutes kliya marinate ker lein.
Us he karahi mein cooking oil dal dein aur marinated pieces ko darmiyani ancch per tamam sides sa golden brown ho janay tak fry ker lein & side per rakh dein.
Remaining marinade ko bad mein use kernay kliya side per rakh dein.
Us he karahi mein cooking oil aur reserved marinade dal ker ubal anay dein aur dhak ker darmiyani ancch per 4-5 minutes kliya paka lein.
Namak,lemon juice aur kasuri methi dal ker ache tarhan mix ker lein.
Fried mutton dal ker ache tarhan mix karein aur dhak ker halki ancch per 4-5 minutes kliya paka lein phir tez ancch per oil alag ho janay tak paka lein.
Chulha bund ker dein aur 2-3 minutes kliya koyla ka dhuwan dein.
Hari mirch aur hara dhania sa garnish karein aur naan ka saath serve karein!
