Ingredients:
Prepare Bhallay (Mong daal & Besan):
-Mong daal (Yellow lentil) 1 Cup
-Zeera (Cumin seeds) roasted 1 tsp
-Sabut lal mirch (Button red chillies) 5-6
-Besan (Gram flour) sifted 1 Cup
-Namak (Salt) 1 tsp or to taste
-Water ¾ Cup or as required
-Baking soda 1 tsp
-Adrak (Ginger) crushed 1 tsp
-Cooking oil 1 tbs
-Cooking oil for frying
-Water as required
Prepare Creamy Dahi:
-Doodh (Milk) 1 & ½ Cup
-Cornflour 1 & ½ tbs
-Ice cubes as required
-Dahi (Yogurt) chilled 750g
-Olper’s Dairy Cream chilled 200ml
-Sugar powdered ½ Cup
-Namak (Salt) ½ tsp
Prepare Khajoor Imli ki Chutney:
-Water 2 Cups
-Khajoor (Dates) deseeded 12-13
-Imli pulp (Tamarind pulp) 1 Cup
-Gur (Jaggery) crushed 100g
-Namak (Salt) ¼ tsp or to taste
-Saunf powder (Fennel powder) ½ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Adrak powder (Ginger powder) 1 tsp
-Kala namak (Black salt) ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
Assembling:
-Safed chanay (Chickpeas) boiled
-Papri
-Kala namak (Black salt) to taste
-Dahi bara masala
-Lal mirch (Red chilli) crushed
-Zeera (Cumin seeds) crushed
-Anar (Pomegranate)
-Lal mirch (Red chilli) crushed
Directions:
Prepare Bhallay (Mong daal & Besan):
-In spice grinder,add yellow lentil,cumin seeds,button red chillies & grind to make powder.
-Take out in a bowl,add gram flour,salt & mix well.
-Gradually add water,mix well until thick batter is formed & mix continuously for 2-3 minutes with the help of spoon,cover & let it rest for 15-20 minutes.
-Add baking soda,ginger,cooking oil & mix well for a minute.
Note: To check the consistency of batter,drop 1 tbs of batter & pour in water,if it sinks,beat again for 1-2 minutes.If batter floats,its ready to use.
-In a wok,heat cooking oil,pour the batter with the help of small ladle and fry on low flame until golden brown.
-In a bowl,add water,fried baray and let them soak for 15-20 minutes then take out from water and squeeze gently to remove excess water & set aside.
Prepare Creamy Dahi:
-In a saucepan,add milk and cornflour,whisk well and cook until it thickness and mix continuously.
-Let it cool completely.
-In a large bowl,add ice cubes & place another bowl over it,add yogurt,cream,cornflour & milk mixture,sugar,salt & whisk until its smooth & creamy.
-Add fried bhallay & mix well.
Prepare Khajoor Imli ki Chutney:
-In a saucepan,water,dates,tamarind pulp,jaggery,salt,fennel powder,red chilli powder,garlic powder,black salt,cumin seeds & mix well,bring it to boil & cook on low flame for 8-10 minutes then blend well with the help of blender.
-Let it cool.
Assembling:
-In a serving bowl,add dahi bhallay & break with spoon.
-Add boiled chickpeas,papri,black salt,dahi bara masala,red chilli crushed,cumin seeds,prepared dahi,prepared khajoor imli ki chutney,pomegranate,red chilli crushed & serve!
