Ingredients:
Prepare Base Marinade:
- Dahi (Yogurt) ½ Cup
- Kacha papita paste (Raw papaya paste) 4 tbs
- Adrak lehsan paste (Ginger garlic paste) 4 tbs
- Lemon juice 4-6 tbs
- Zeera powder (Cumin powder) 2 tsp
- Garam masala powder 1 & ½ tsp
- Namak (Salt) 1 tbs or to taste
- Dhania powder (Coriander powder) 2 tsp
Prepare Chatpatti BBQ Beef Boti:
- Boneless beef 400g
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Baisan (Gram flour) 1 tbs
- Chaat masala 1 tsp
- Pyaz (Onion) fried 1 tbs
Prepare Hari Chutni Boti:
- Hari mirch (Green chillies) 6-7
- Podina (Mint leaves) ¼ Cup
- Hara dhania (Fresh coriander) ¼ Cup
- Water 1 tbs or as required
- Boneless chicken 400g
Prepare Malai Boti:
- Boneless chicken 400g
- Hari mirch (Green chilli) paste ½ tbs
- Cream 3-4 tbs
- Kali mirch powder (Black pepper powder) ½ tsp
- Safed mirch powder (White pepper powder) ½ tsp
- Baisan (Gram flour) 1 tbs
Prepare Tikka Drumsticks:
- Drumsticks 400g (4 pieces)
- Lal mirch (Red chilli) crushed 1 tsp
- Haldi powder (Turmeric powder) ½ tsp
- Lal mirch powder (Red chilli powder) 1 tsp or to taste
- Zarda ka rang (Orange food color) ¼ tsp
- Cooking oil
Directions:
Prepare Base Marinade:
In a bowl,add yogurt,raw papaya paste,ginger garlic paste,lemon juice,cumin powder,garam masala powder,salt,coriander powder & whisk well.Marination base is ready!
Prepare Chatpatti BBQ Beef Boti:
In a bowl,add boneless beef,base marinade ½ Cup,red chilli powder,gram flour,chaat masala,fried onion & mix well,cover & marinate overnight or minimum 4-6 hours in refrigerator.
Thread beef cubes on skewers.
Prepare Hari Chutni Boti:
In a spice mixer,add green chillies,mint leaves,fresh coriander,water,blend well & set aside.
In a bowl,add boneless chicken,base marinade ½ Cup,blended green paste & mix well, cover & marinate overnight or minimum 4-6 hours in refrigerator.
Thread chicken cubes on skewers.
Prepare Malai Boti:
In a bowl,add boneless chicken,base marinade ¼ Cup,green chilli,cream,black pepper powder, white pepper powder,gram flour,mix well, cover & marinate overnight or minimum 4-6 hours in refrigerator.
Thread chicken cubes on skewers.
Prepare Tikka Drumsticks:
Make deep cuts on drumsticks with the help of knife.
In a bowl,add drumsticks,base marinade ½ Cup,red chilli crushed,turmeric powder,red chilli powder,orange food color,mix well, cover & marinate overnight or minimum 4-6 hours in refrigerator.
Heat cast iron grill pan or charcoal & grease grill pan with oil.
Grill on charcoal or grill in pan (malai boti,chatpatti BBQ beef boti,hari chutni boti,drumsticks) until done (4-5 minutes each side) and brush cooking oil in between.
Serve with chutney.

Bowl mein boneless beef,base marinade ½ Cup,lal mirch powder,baisan,chaat masala aur fried pyaz dal ker ache tarhan mix karein aur dhak ker 5-6 hours or overnight kliya refrigerator mein marinate ker lein.
Beef cubes ko skewers per laga lein.
Prepare Hari Chutni Boti:
Spice mixer mein hari mirchein,podina,hara dhania aur pani dal ker ache tarhan blend ker lein & side per rakh dein.
Bowl mein boneless chicken,base marinade base ½ Cup & blended green paste dal ker ache tarhan mix karein aur dhak ker 5-6 hours or overnight kliya refrigerator mein marinate ker lein.
Chicken cubes ko skewers per laga lein.
Prepare Malai Boti:
Bowl mein boneless chicken,base marinade base ¼ Cup,hari mirch,cream,kali mirch powder,safed mirch powder aur baisan dal ker ache tarhan mix karein aur dhak ker 5-6 hours or overnight kliya refrigerator mein marinate ker lein.
Chicken cubes ko skewers per laga lein.
Prepare Tikka Drumsticks:
Drumsticks per knife ki madad sa deep cuts laga lein.
Bowl mein boneless chicken,base marinade ½ Cup,lal mirc crushed,haldi powder,lal mirch powder aur zarda ka rang dal ker ache tarhan mix karein aur dhak ker 5-6 hours or overnight kliya refrigerator mein marinate ker lein.
Cast iron grill pan ko garam karein aur oil sa grease ker lein or koyla garam ker lein.
Malai boti,chatpatti bbq beef boti,hari chutni boti aur drumsticks ko grill ker lein (4-5 minutes each side) aur bech bech mein oil lagatay rahein.
