BBQ Kabab Platter

Ingredients:

Prepare Base Marinade:

  • Dahi (Yogurt) ½ Cup
  • Kacha papita paste (Raw papaya paste) 4 tbs
  • Adrak lehsan paste (Ginger garlic paste) 4 tbs
  • Lemon juice 4-6 tbs
  • Zeera powder (Cumin powder) 2 tsp
  • Garam masala powder 1 & ½ tsp
  • Namak (Salt) 1 tbs or to taste
  • Dhania powder (Coriander powder) 2 tsp

Prepare Chatpatti BBQ Beef Boti:

  • Boneless beef 400g
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Baisan (Gram flour) 1 tbs
  • Chaat masala 1 tsp
  • Pyaz (Onion) fried 1 tbs

Prepare Hari Chutni Boti:

  • Hari mirch (Green chillies) 6-7
  • Podina (Mint leaves) ¼ Cup
  • Hara dhania (Fresh coriander) ¼ Cup
  • Water 1 tbs or as required
  • Boneless chicken 400g

Prepare Malai Boti:

  • Boneless chicken 400g
  • Hari mirch (Green chilli) paste ½ tbs
  • Cream 3-4 tbs
  • Kali mirch powder (Black pepper powder) ½ tsp
  • Safed mirch powder (White pepper powder) ½ tsp
  • Baisan (Gram flour) 1 tbs

Prepare Tikka Drumsticks:

  • Drumsticks 400g (4 pieces)
  • Lal mirch (Red chilli) crushed 1 tsp
  • Haldi powder (Turmeric powder) ½ tsp
  • Lal mirch powder (Red chilli powder) 1 tsp or to taste
  • Zarda ka rang (Orange food color) ¼ tsp
  • Cooking oil

Directions:

Prepare Base Marinade:

In a bowl,add yogurt,raw papaya paste,ginger garlic paste,lemon juice,cumin powder,garam masala powder,salt,coriander powder & whisk well.Marination base is ready!

Prepare Chatpatti BBQ Beef Boti:

In a bowl,add boneless beef,base marinade ½ Cup,red chilli powder,gram flour,chaat masala,fried onion & mix well,cover & marinate overnight or minimum 4-6 hours in refrigerator.

Thread beef cubes on skewers.

Prepare Hari Chutni Boti:

In a spice mixer,add green chillies,mint leaves,fresh coriander,water,blend well & set aside.

In a bowl,add boneless chicken,base marinade ½ Cup,blended green paste & mix well, cover & marinate overnight or minimum 4-6 hours in refrigerator.

Thread chicken cubes on skewers.

Prepare Malai Boti:

In a bowl,add boneless chicken,base marinade ¼ Cup,green chilli,cream,black pepper powder, white pepper powder,gram flour,mix well, cover & marinate overnight or minimum 4-6 hours in refrigerator.

Thread chicken cubes on skewers.

Prepare Tikka Drumsticks:

Make deep cuts on drumsticks with the help of knife.

In a bowl,add drumsticks,base marinade ½ Cup,red chilli crushed,turmeric powder,red chilli powder,orange food color,mix well, cover & marinate overnight or minimum 4-6 hours in refrigerator.

Heat cast iron grill pan or charcoal & grease grill pan with oil.

Grill on charcoal or grill in pan (malai boti,chatpatti BBQ beef boti,hari chutni boti,drumsticks) until done (4-5 minutes each side) and brush cooking oil in between.

Serve with chutney.
