Chicken Baskets in Air fryer

Ingredients:

-Cooking oil 1 tbs

-Boneless chicken small cubes 200g

-Tomato paste 2 tbs

-Dried oregano ½ tsp

-Himalayan pink salt ¼ tsp or to taste

-Kali mirch powder (Black pepper powder) ¼ tsp

-Makhan (Butter) 2 tbs

-Cooking oil 1 tsp

-Pyaz (Onion) chopped ½ Cup

-Gajar (Carrot) chopped ¼ Cup

-Shimla mirch (Capsicum) chopped ¼ Cup

-Corns kernels boiled ¼ Cup

-Himalayan pink salt ¼ tsp or to taste

-Kali mirch powder (Black pepper powder) ¼ tsp

-Lal mirch (Red chill) crushed ½ tsp

-Maida (All-purpose flour) 1 tbs

-Doodh (Milk) ½ Cup

-Cream ¼ Cup (room temperature)

-Cheddar Cheese grated ½ Cup

-Maida (All-purpose flour) 1-2 tbs

-Water 2-3 tbs

-Spring roll sheets as required

-Mozzarella cheese grated as required

-Mayonnaise

 

Directions:

-In a frying pan,add cooking oil,chicken,tomato paste,dried oregano,pink salt,black pepper powder, mix well & cook on medium flame until chicken is tender (6-8 minutes) & set aside.

-In the same frying pan,add butter,cooking oil & let it melt.

-Add onion & sauté for a minute.

-Add carrot,capsicum,corn kernels & mix well.

-Add pink salt,black pepper powder,red chilli crushed,mix well & cook on medium flame for a minute.

-Add all-purpose flour,mix well & sauté for 2 minutes.

-Add milk,mix well & cook until it thickens.

-Turn off the flame,add cream,cheddar cheese & mix well.

-Turn on the flame & cook on low flame until cheese melts (1-2 minutes).

-Add cooked chicken,mix well & set aside.

-In a small bowl,add all-purpose flour,water & mix well.Flour slurry is ready!

-Take 4x4-inches spring roll sheet,cut diagonally & apply flour slurry on two parallel sides of spring roll leaf,fold the corners & stick together in such a way that makes a basket.

-Add prepared chicken filling,mozzarella cheese & apply cooking oil with the help of brush.

-Air fry at 150°C until cheese melts (6-7 minutes).

-Drizzle mayonnaise & serve (makes 6-8).
