Ingredients:

Prepare Phulki:

-Moong daal (Yellow lentil) 1 Cup (soaked for 1 hour)

-Lehsan (Garlic) 2-3 cloves

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Himalayan pink salt ½ tsp or to taste

-Water ½ Cup

-Baking soda ½ tsp

-Cooking oil for frying

-Water as required

-Himalayan pink salt 1 tsp

Prepare Creamy Yogurt:

-Dahi (Yogurt) 750g

-Olper’s Cream ½ Cup

-Sugar ½ Cup or to taste

Prepare Gur Imli ki Chutney:

-Gur (Jaggery) 1 Cup

-Imli pulp (Tamarind pulp) 4 tbs

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Sonth powder (Ginger powder) 1 tsp

-Himalayan pink salt ¼ tsp or to taste

-Lal mirch (Red chilli) crushed ¼ tsp

-Water 1 & ½ Cup

-Cornflour 2 tbs

-Water 2-3 tbs

-Chaat masala

 

Direction:

Prepare Phulki:

-In a blender,add yellow lentil,garlic,red chilli powder,pink salt,water & blend well.

-Take out in a bowl,add baking soda & whisk well until fluffy then transfer to a piping bag.

-In a wok,heat cooking oil,place a wire rack over hot oil & pipe out phulki batter over it & fry on medium flame until golden & crispy.

-In a large bowl,add water & pink salt & mix well.

-Add fried phulki,cover & let them soak until soft (15 minutes) then take out from water and squeeze gently to remove excess water & set aside.

Note: To check the consistency of batter,drop 1 tbs of batter in water,if it sinks,beat again for 1-2 minutes.If batter floats,its ready to use.

Prepare Creamy Yogurt:

-In a bowl,add yogurt,cream,sugar,whisk well until sugar is dissolved & set aisde.

Prepare Gur Imli ki Chutney:

-In a saucepan,add jaggery,tamarind pulp,red chilli powder,ginger powder,pink salt,red chilli crushed & water,mix well & bring it to a boil & cook on medium flame for 4-5 minutes.

-In a bowl,add cornflour,water & mix well.

-Now add dissolved cornflour,mix well & cook until it thickens.

-Let it cool completely.

Assembling:

-In a serving dish,add phulkiyan,creamy yogurt,gur imli ki chutney,chaat masala & serve!
