Lentil Base Ingredients:
-Chana Daal (Split bengal gram) soaked 1 & ½ Cup
-Mong Daal (Yellow lentil) soaked ½ Cup
-Pyaz (Onion) sliced 1 medium
-Tamatar (Tomatoes) chopped 2 medium
-Hari mirch (Green chillies) 2
-Lehsan (Garlic) cloves 3
-Tez patta (Bay leaf) 1
-Darchini (Cinnamon stick) 1
-Laung (Cloves) 3
-Cooking Oil ¼ cup
-Iodized Himalayan pink salt 1 tsp or to taste
-Haldi powder (Turmeric powder) ¼ tsp
-Water 3 Cups
Tadka ingredients for 2 servings
-Cooking oil 1/3 cup
-Lehsan (Garlic) chopped 1 tbs
-Pyaz (Onion) chopped 3-4 tbs
-Zeera (Cumin seeds) 1 tsp
-Sukhi lal mirch (Dry red chillies) 4-5
-Lal mirch powder (Red chilli powder) 1 tsp
-Garam masala powder ½ tsp
-Dhania powder (Coriander powder) 1 tsp
-Kashmiri lal mirch (Kashmiri red chilli ) powder 1/2 tsp
-Hara dhania (Fresh coriander) chopped handful
-Adrak (Ginger) julienne as required
Tadka ingredients for 6 servings (1& ½ cup Lentil)
-Cooking oil ½ cup
-Lehsan (Garlic) chopped 1 tbs
-Pyaz (Onion) chopped 1 medium
-Zeera (Cumin seeds) 2 tsp
-Sukhi lal mirch (Dry red chillies) 4-5
-Lal mirch powder (Red chilli powder) 1 tsp
-Garam masala powder 1 tsp
-Dhania powder (Coriander powder) 1.5 tsp
-Kashmiri lal mirch (Kashmiri red chilli ) powder 1 tsp
-Hara dhania (Fresh coriander) chopped handful
-Adrak (Ginger) julienne as required
Directions:
-To prepare lentil base, in a wok, add split gram lentil, yellow lentil, onions, tomatoes, green chilies, garlic, bay leaf, cinnamon stick, cloves, cooking oil, pink salt, turmeric powder, and water. Mix well & turn on the flame.
-Bring it to a boil, cover & cook on low flame until the daal becomes tender for 30-40 minutes.
(In a pressure cooker, cook for 10-12 minutes)
Note: You can store this lentil base for 2-3 days in an airtight container in the refrigerator.
-To prepare Tadka, In a pan, add cooking oil, heat it.
-Add garlic, onion, fry until light golden, add cumin, dry red chili, fry until light golden.
-Add red chili powder, garam masala powder, coriander powder, Kashmiri red chilli powder mix well.
-Add cooked Daal, mix well, cook on high flame for 30 seconds.
-Add fresh coriander, ginger. Turn the flame off.
Serve with rice & naan!
