Ingredients:
Prepare Chicken Tikka Sticks:
-Dahi (Yogurt) 1 & ½ Cup
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Hari mirch (Green chilli) crushed ½ tbs
-Dhania powder (Coriander powder) 1 tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tbs
-Iodized Himalayan pink salt 1 tsp or to taste
-Zeera powder (Cumin powder) ½ tbs
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Garam masala powder ½ tsp
-Javitri powder (Mace powder) ¼ tsp
-Jaifal powder (Nutmeg powder) ¼ tsp
-Orange food color ¼ tsp
-Lemon juice 1 tbs
-Boneless chicken 400g 1inch cubes
-Pyaz (Onion) diced 1 large
-Shimla mirch (Capsicum) diced
-Tamatar (Tomato) diced
-Cooking oil 2 tbs
Prepare Creamy BBQ Sauce:
-Cooking oil 1/2 tbs
-Bareek cheeni (Caster sugar) 1 tsp
-Cream ½ Cup
-Koyla (Charcoal) for smoke
-Cooking oil
Prepare Butter Masala Rice:
-Cooking oil 1 tsp
-Makhan (Butter) 2 tbs
-Pyaz (Onion) finely chopped 1 small
-Hari mirch (Green chilli) finely chopped 1 tbs
-Hara dhania (Fresh coriander) chopped handful
-Water 2 tbs
-Safed mirch powder (White pepper powder) ½ tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Chicken powder 2 tsp
-Chawal (Rice) Sella 2 Cups soaked & boiled with salt
-Pyaz (Onion) rings
-Hara dhania (Fresh coriander) chopped
Directions:
Prepare Chicken Tikka Sticks:
-In a bowl,add yogurt,ginger garlic paste,green chilli,coriander powder,kashmiri red chilli powder,pink salt,cumin powder,red chilli powder,garam masala powder,mace powder,nutmeg powder,orange food color,lemon juice & whisk well.
(You can substitute all dry spices with ready tikka masala)
-Add chicken & mix well,cover & marinate for 30 minutes.
-Thread onion,capsicum,tomato & marinated chicken in a wooden skewer repeat steps 2 times more. (Makes 10-12) & reserve remaining marinade for later use.
-In frying pan,heat cooking oil & fry chicken tikka sticks from both sides until light golden then cover & cook on medium flame until done (3-4 minutes each side) & set aside.
Prepare Creamy BBQ Sauce:
-In same frying pan,add cooking oil,reserved marinade,mix well & cook on medium flame for a minute.
-Turn off the flame,add caster sugar & cream.
-Turn on the flame,mix well & cook for 2-3 minutes.
-Give coal smoke for a minute.Creamy BBQ sauce is ready!
Prepare Butter Masala Rice:
-In a wok,add cooking oil,butter & let it melt.
-Add onion,green chilli,mix well & sauté for a minute.
-Add fresh coriander & mix well.
-Add water,white pepper powder,black pepper crushed,chicken powder & mix well
-Add boiled rice,mix well & cook on high flame for a minute.
-In a serving bowl,add prepared rice,chicken tikka sticks,prepared creamy BBQ sauce,onion rings,fresh coriander & serve!

-Bowl mein dahi, adrak lehsan paste, hari mirch, dhania powder, kashmiri lal mirch powder, pink namak, zeera powder, lal mirch powder, garam masala powder, mace powder, jaifil powder, orange food color, lemon juice dal kar whisk karen.
-Chicken dal kar mix karen, cover karke 30 minutes ke liye marinate karen.
-Lakri ke skewers par pyaz, shimla mirch, tamatar aur marinated chicken lagayen, ye step 2 dafa repeat karen (total 10-12 sticks banayen), aur baqi ka marinade baad ke liye rakh len.
-Frying pan mein oil garam karen, chicken tikka sticks dono sides se halka golden fry karen, phir cover karke medium flame par 3-4 minutes har side se cook karen, set aside kar len.
Prepare Creamy BBQ Sauce:
-Same frying pan mein oil dalen, reserved marinade dal kar medium flame par 1 minute cook karen.
-Flame off karen, caster sugar aur cream dal kar mix karen.
-Flame on karke 2-3 minutes cook karen.
-Coal smoke 1 minute ke liye den, creamy BBQ sauce tayar hai.
Prepare Butter Masala Rice:
-Wok mein oil aur butter dal kar melt karen.
-Pyaz aur hari mirch dal kar 1 minute sauté karen.
-Hara dhania dal kar mix karen.
-Pani, white pepper powder, kali mirch crushed aur chicken powder dal kar mix karen.
-Boiled chawal dal kar high flame par 1 minute cook karen.
Assembling:
-Serving bowl mein prepared rice dalen, chicken tikka sticks rakhen, upar se creamy BBQ sauce dalen,pyaz rings aur hara dhania dal kar serve karen.
