Ingredients:
-Baingan (Eggplants) 2 (500g)
-Tamatar (Tomatoes) 2 medium
-Cooking oil 2-3 tbs
-Makhan (Butter) 1 tbs
-Pyaz (Onion) finely chopped 1 medium
-Lehsan (Garlic) chopped 2 tbs
-Haldi powder (Turmeric powder) ½ tsp (optional)
-Iodized Himalayan pink salt ½ tsp or to taste
-Kali mirch powder (Black pepper powder) ½ tsp or to taste
-Tomato paste 1 & ½ tbs
-Anday (Eggs) 3
-Hara dhania (Fresh coriander) chopped
Directions:
-Make cuts with the help of knife & grease eggplant with cooking oil.
-Insert skewer & fire roast eggplant over medium flame until skin is charred,remove charred skin,chop well & set aside.
-Insert skewer on tomatoes & fire roast over medium flame until skin is charred,remove charred skin,chop well & set aside.
-In cast iron pan,add cooking oil,butter & let it melt.
-Add onion,garlic,mix well & sauté until onions are translucent.
-Add chopped eggplant & mix well.
-Add turmeric powder,pink salt,black pepper powder & mix well.
-Add chopped tomatoes,tomato paste,mix well & cook on medium flame for 2-3 minutes & mash slightly mash with the help of masher & cook on medium flame for 1-2 minutes.
-Add eggs one by one,cover & cook on low flame for 2-3 minutes.
-Garnish with fresh coriander & serve with garlic bread!

-Sabse pehle baingan par knife ki madad se cuts lagayein aur cooking oil se grease kar lein.
-Skewer insert karke medium flame par fire roast karein jab tak skin charred na ho jaye. Skin hata kar chop kar lein aur side par rakh dein.
-Tamatar bhi skewer par insert karke medium flame par fire roast karein, skin charred hone par hata kar chop kar lein aur side par rakh dein.
-Cast iron pan mein cooking oil, butter dal kar melt hone dein.
-Pyaz, lehsan daal kar mix karein aur translucent hone tak sauté karein.
-Chopped baingan daal kar achi tarah mix karein.
-Haldi powder, pink salt, kali mirch powder daal kar combine karein.
-Chopped tamatar, tomato paste daal kar mix karein aur 2-3 minutes medium flame par cook karein aur masher ki madad se halka sa mash kar lein. 1-2 minutes cook karein.
-Anday ek ek karke daal kar cover karein aur 2-3 minutes low flame par cook hone dein.
-Fresh hara dhania se garnish karein aur garlic bread ke sath serve karein.
