Ingredients:

Prepare Green Chutney:

-Hara dhania (Fresh Coriander) handful

-Podina (Mint leaves) handful

-Hari mirch (Green chillies) sliced 3

-Lehsan (Garlic) 2 cloves

-Zeera (Cumin) Roasted & crushed 1 tsp

-Iodized Himalayan pink salt ½ tsp or to taste

-Imli pulp (Tamarind pulp) 4 tbs

-Water ¼ Cup (if required)

Prepare Potato Chaat Layer:

-Cooking oil 2-3 tbs

-Zeera (Cumin seeds) 1 tsp

-Adrak lehsan paste (Ginger garlic paste) 1 tsp

-Hari mirch (Green chillies) chopped 2

-Aloo (Potatoes) boiled 3 large

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Iodized Himalayan pink salt 1 tsp or to taste

-Chaat masala powder 1 tsp

-Pyaz (Onion) chopped ½ Cup

-Anaar (Pomegranate) ½ Cup

-Mong phali (Peanuts) spicy roasted ½ Cup

-Hara dhania (Fresh Coriander) chopped handful

-Safed chanay (Chickpeas) boiled ¾ Cup

-Lemon Juice ½ tsp

Assembling:

-Papri as required

-Dahi (Yogurt) whisked 1 Cup

-Gu imli ki chutney as required

-Pyaz (Onion) chopped as required

-Chaat masala as required

-Anaar (Pomegranate) as required

-Daal sev as required

Direction:

Prepare Green Chutney:

-In a grinder, add fresh coriander, mint leaves, green chillies, garlic, cumin, pink salt, tamarind pulp, add water (¼ Cup) if required, grind well.

Prepare Potato Chaat Layer:

-In a wok, add cooking oil, heat it.

-Add cumin seeds, ginger garlic paste, green chillies, mix well, fry until fragrant & light golden.

-Add boiled potatoes, mix well, slightly mash it with the help of masher.

-Add red chilli powder, pink salt, chaat masala powder, mix well, cook on medium flame for 1 minute while mixing continuously.

-Turn off the flame & let it completely cool down.

-Add onion, pomegranate, spicy roasted peanuts, fresh coriander, boiled chickpeas, squeeze lemon & mix well.

Assembling:

-In a serving bowl or cup, add crushed papri, prepared potato mixture, whisked yogurt, prepared green chutney, sweet tamarind chutney, crushed papri, onion.

-Garnish with whisked yoghurt, pomegranate, daal sev, & serve!
