Recipe in English:
Ingredients:
-Boiling water as required
-Palak (Spinach) chopped 250g
-Iced water as required
-Hari mirch (Green chilli) 1
-Hara dhania (Fresh coriander) handful
-Water ½ Cup or as required
-Makhan (Butter) 30g
-Olive oil 1 tbs
-Pyaz (Onion) chopped 1 medium
-Lehsan (Garlic) chopped ½ tbs
-Aloo (Potato) cubes 1 medium
-Gajar (Carrot) grated ½ Cup
-Stock vegetable or chicken 3 Cups (Substitute 3 Cups of water)
-Dried oregano 1 tsp
-Kali mirch (Black pepper) crushed ½ tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Doodh (Milk) 1 Cup
-Olper’s cream 3/4 Cup
-Olper’s cream
-Chilli oil
-Croutons
Directions:
-In boiling water,add spinach & blanch for 30 seconds,take out & add in iced water & let it rest for 5-10 minutes then strain.
-In blender jar,add strained spinach,green chilli,fresh coriander,water,blend well & set aside.
-In a cooking pot,add butter,olive oil & let it melt.
-Add onion,garlic & sauté until translucent.
-Add potato,carrot,mix well & cook on medium flame for 2-3 minutes.
-Add stock & bring it to boil,cover & cook on low flame until tender (8-10 minutes).
-Turn off the flame & blend well.
-Turn on the flame,add dried oregano,black pepper crushed,pink salt,mix well & cook for 1-2 minutes.
-Turn off the flame,add milk,cream & mix well,turn on the flame & cook on low flame for 2-3 minutes.
-Add blended spinach, mix well & cook on low flame for a minute.
-In a serving bowl,add cream of spinach soup,garnish with cream,chilli oil & serve with croutons!

-Boiling water mein palak dal ker 30 seconds kliya blanch karein phir bahir nikaal kar iced water mein daal dein,5-10 minutes rest dein phir strain kar lein.
-Blender jar mein strained palak,hari mirch,hara dhania aur pani dal ker ache tarhan blend ker lein & side per rakh dein.
-Cooking pot mein makhan aur olive dal ker melt ker lein.
-Pyas aur lehsan dal kar translucent hone tak sauté kar lein.
-Aloo aur gajar daal kar acchi tarhaan mix karein aur medium flame par 2-3 minutes cook kar lein.
-Yakhni dal kar ubal anay dein phir cover karke low flame par 8-10 minutes tender hone tak cook kar lein.
-Chulha bund ker dein aur ache tarhan blend ker lein.
-Chulha on karein,dried oregano,crushed kali mirch aur pink salt dal kar 1-2 minutes cook kar lein.
-Chulha bund ker dein,doodh aur cream daal kar mix karein, phir chulha on karke low flame par 2-3 minutes cook kar lein.
-Blended palak dal kar mix karein aur low flame par 1 minute cook kar lein.
-Serving bowl mein cream of spinach soup dal kar cream aur chilli oil se garnish karein aur croutons ke saath serve karein!
