Ingredients:

Prepare Lemon Herb Chicken:

-Boneless chicken cubes 350g

-Paprika powder 1 tsp

-Lehsan powder (Garlic powder) ½ tsp

-Chicken powder 1 tsp

-Onion powder 1 tsp

-Lehsan (Garlic) finely chopped 1 tsp

-Basil leaves (chopped) 1 tbs

-Soya (Dil) chopped 1 tbs

-Fresh parsley (chopped) 1 tbs

-Lemon juice ½ tbs

-Olive oil 2-3 tbs

Prepare Hummus

-Safed chanay (Chickpeas) boiled 1 & ½ Cup

-Lehsan (Garlic) 2 cloves

-Tahini paste 3-4 tbs

-Yogurt 1 tbs

-Lemon juice 2 tbs

-Olive oil (Extra virgin) 2 tbs

-Zeera (Cumin seeds) Roasted & crushed ½ tsp

-Iodized Himalayan pink salt ¼ tsp or to taste

-Ice cubes 2

Prepare Balsamic Salad:

-Lehsan (Garlic) finely chopped 2 cloves

-Fresh soya (Dil) chopped 1 tbs

-Basil leaves (Chopped) 1 tbs

-Iodized Himalayan pink salt ¼ tsp or to taste

-Kali mirch (Black pepper) crushed ¼ tsp

-Balsamic vinegar 1 tbs

-Olive oil (Extra virgin) 3 tbs

-Shimla mirch (Capsicum) ½ Cup

-Red bell pepper ½ Cup

-Black olives (Sliced) 7-8

-Pyaz (Onion) julienne ½ Cup

-Kheera (Cucumber) julienne ½ Cup

-Cherry tomatoes (Halved) 5-6

Assembling

-Potato wedges as required

-Pita bites as required

 

Direction:

Prepare Lemon Herb Chicken:

-In a bowl, add chicken, paprika powder, garlic powder, chicken powder, onion powder, garlic, basil leaves, dil, fresh parsley, lemon juice, mix well.

-In a pan, add olive oil, heat it, add chicken, mix well & cook on medium flame for 6-8 minutes or until its done.

Prepare Hummus

-In a blending jug, add boiled white chickpea, garlic cloves, tahini paste, yogurt, lemon juice, olive oil, cumin, pink salt, ice cubes & blend well.

Prepare Balsamic Salad:

-In a bowl, add garlic, dill, basil leaves, pink salt, black pepper crushed, balsamic vinegar, olive oil, mix well, dressing is ready!

-In a bowl, add capsicum, red bell pepper, black olives, onion, cucumber, cherry tomatoes, prepared salad dressing & mix well then set aside.

Assembling:

-Serve lemon herb chicken with hummus, prepared balsamic tomato cucumber salad, potato wedges & pita bites!
