Ingredients:
Prepare Samosa Dough:
-Maida (All-purpose flour) sifted 3 Cups
-Iodized Himalayan pink salt ½ tbs
-Ajwain (Carom seeds) 1 tsp
-Ghee (Clarified butter) 3 tbs
-Water ¾ Cup or as required
Prepare Filling:
-Cooking oil 2 tbs
-Pyaz (Onion) finely chopped 1 medium
-Hari mirch (Green chillies) finely chopped ½ tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Zeera (Cumin seeds) roasted & crushed 1 & ½ tsp
-Lal mirch (Red chilli) crushed 1 & ½ tsp
-Sabut dhania (Coriander) crushed 1 tbs
-Iodized Himalayan pink salt ½ tsp or to taste
-Chaat masala 1 tsp
-Chicken powder 1 tsp (optional)
-Haldi powder (Turmeric powder) ½ tsp
-Lemon juice 1-2 tbs
-Aloo (Potato) boiled 4-5 medium
-Podina (Mint leaves) chopped handful
-Hara dhania (Fresh coriander) chopped handful
-Dry Flour as required
-Cooking oil (For Frying) as required
Direction:
Prepare Samosa Dough:
-In a bowl, add all-purpose flour, pink salt, carom seeds (crush with hands), clarified butter, mix well until crumbled.
-Add water gradually, mix & knead well until dough is formed.
-Cover & let it rest for 15-20 minutes.
Prepare Filling:
-In a pan, add cooking oil, heat it, add onion & fry on medium flame until translucent.
-Add green chillies, ginger garlic paste & fry on low flame until fragrant.
-Add cumin, red chilli crushed, coriander, pink salt, chaat masala powder, chicken powder, turmeric powder, lemon juice, mix well, cook on medium flame for 1-2 minutes.
-Add boiled potatoes, crush with hands mix well & cook on medium flame for 1-2 minutes.
-Add mint leaves, fresh coriander, mix well, potato filling is ready, take out & let it cool completely.
-Take out the dough on a flat surface, knead again until smooth & take 50g of the dough ball.
-Roll out with the help of a rolling pin (5 inches), add potato filling (3-4 tbs), make cuts & wrap dough strips over potato filling & make potli shape samosa, apply slurry to seal it. (Makes 9-10)
-In a wok, add cooking oil & heat it (140 C-150 °C).
-Add prepared potli samosa, fry on low flame until golden & crispy.
-Serve with ketchup or any desired sauce!

-Ek bowl mein all-purpose flour, pink salt, carom seeds (hathon se crush karen), clarified butter dalein, achi tarah mix karen jab tak crumble jaisi texture ban jaye.
-Ab pani thora thora karke dalein, mix karen aur achi tarah knead karlen jab tak dough ban jaye.
-Cover karke 15–20 minutes ke liye rest karne den.
Prepare Filling:
-Ek pan mein cooking oil dalein, heat karen, onion dalein aur medium flame par fry karen jab tak translucent ho jaye.
-Green chillies aur ginger garlic paste dalein aur low flame par fry karen jab tak khushboo na ajaye.
-Ab cumin, red chilli crushed, coriander, pink salt, chaat masala powder, chicken powder, turmeric powder aur lemon juice dalein, mix karen aur medium flame par 1–2 minutes cook karen.
-Boiled potatoes dalein, hathon se crush karen, mix karen aur medium flame par 1–2 minutes cook karen.
-Mint leaves aur fresh coriander dalein, mix karen, potato filling ready hai. Isay nikal kar completely thanda hone den.
-Dough ko flat surface par nikal kar dobara knead karlen jab tak smooth ho jaye aur 50g ka dough ball bana len.
-Rolling pin ki madad se 5 inch ka roll karlen, potato filling (3–4 tbsp) dalein, cuts lagayen aur dough strips ko filling par wrap karen aur potli shape samosa bana len, seal karne ke liye slurry laga den. (9–10 ban jate hain)
-Wok mein cooking oil dalein aur heat karen (140°C–150°C).
-Prepared potli samosa dalein aur low flame par fry karen jab tak golden aur crispy ho jaye.
-Ketchup ya kisi bhi desired sauce ke sath serve karen!
