Ingredients:

Prepare Crispy Chunky Aloo Tikki

-Boiling water as required

-Iodized Himalayan pink salt 1 tbs or to taste

-Aloo (Potato) 500g

-Palak (Spinach) chopped 100g

-Hara dhania (Fresh coriander) handful

-Podina (Mint) leaves handful

-Hari mirch (Green chillies) 2-3

-Iodized Himalayan pink salt 1 tsp or to taste

-Adrak lehsan (Ginger garlic) crushed 2 tsp

-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp

-Chaat masala 1 tsp

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Haldi powder (Turmeric powder) ½ tsp

-Sabut  Dhania (Coriander seeds) crushed 1 tbs

-Chawal ka atta (Rice flour) 4 tbs

-Baisan (Gram flour) roasted 1 Cup

-Water ⅓ Cup

-Dalda double refined cooking oil (For frying)

Prepare Green Chutney:

-Lehsan (Garlic) 3 cloves

-Adrak (Ginger) sliced 1 inch

-Hari mirch (Green chillies) 3

-Aloo (Potato) boiled 1 small

-Hara dhania (Fresh coriander) handful

-Podina (Mint leaves) handful

-Zeera (Cumin seeds) roasted & crushed ½ tsp

-Iodized Himalayan pink salt ½ tsp

-Lemon juice 2 tbs

-Water ⅓ Cup

Assembling:

-Safed chanay (White chickpea) boiled ½ Cup or as required

-Dahi (Yogurt) whisked as required

-Gur imli ki chutney as required

-Pyaz (Onions) sliced as required

-Safed chanay (White chickpea) as required

-Daal sev as required

-Anar (Pomegranate) as required

 

Direction:

Prepare Crispy Chunky Aloo Tikki

-Cut potatoes in cubes.

-In Boiling water add pink salt, then add potatoes.

-Boil on medium flame until 80% done for 7-8 minutes.

-Chop spinach, fresh coriander, mint leaves, green chillies, & add in a flat bowl.

-Add pink salt & mix well.

-Cover & let them rest for 10-15 minutes. (pink salt helps to release the moisture from greens)

-Remove the cover, mix well, add ginger garlic crushed, kashmiri red chilli powder, chaat masala powder, cumin, red chilli powder, turmeric powder, coriander, mix well.

-Add boiled potato cubes, mix well, add orange food colour, mix well.

-Add rice flour, gram flour, mix well, add water gradually & mix well.

-Cover & rest for 5 minutes.

-Remove cover, take 150g of patty mixture, & make patty. (Makes 8-9)

-In a wok, add cooking oil, heat it. (170 C)

-Fry on medium to high flame until golden & crispy!

Prepare Green Chutney:

-In a blending jar, add garlic, ginger, green chillies, potato, fresh coriander, mint leaves, cumin, pink salt, lemon juice, water. Blend well until smooth texture forms.

Assembling:

-In a serving plate add fried Aloo tikki, smashed it, add boiled white chickpea, yogurt, gur imli chutney, prepared green chutney, onions, boiled white chickpea, daal sev, pomegranate corns & serve!
