Ingredients:

Prepare Samosa Dough:

-Maida (All-purpose flour) sifted 3 Cups

-Iodized Himalayan pink salt ½ tbs

-Ajwain (Carom seeds) 1 tsp

-Ghee (Clarified butter) 3 tbs

-Water ¾ Cup or as required

Prepare Filling:

-Cooking oil 2 tbs

-Pyaz (Onion) finely chopped 1 medium

-Hari mirch (Green chillies) finely chopped ½ tbs

-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp

-Zeera (Cumin seeds) roasted & crushed 1 & ½ tsp

-Lal mirch (Red chilli) crushed 1 & ½ tsp

-Sabut dhania (Coriander) crushed 1 tbs

-Iodized Himalayan pink salt ½ tsp or to taste

-Chaat masala 1 tsp

-Chicken powder 1 tsp (optional)

-Haldi powder (Turmeric powder) ½ tsp

-Lemon juice 1-2 tbs

-Aloo (Potato) boiled 4-5 medium

-Podina (Mint leaves) chopped handful

-Hara dhania (Fresh coriander) chopped handful

-Dry Flour as required

-Cooking oil (For Frying) as required

 

Direction:

Prepare Samosa Dough:

-In a bowl, add all-purpose flour, pink salt, carom seeds (crush with hands), clarified butter, mix well until crumbled.

-Add water gradually, mix & knead well until dough is formed.

-Cover & let it rest for 15-20 minutes.

Prepare Filling:

-In a pan, add cooking oil, heat it, add onion & fry on medium flame until translucent.

-Add green chillies, ginger garlic paste & fry on low flame until fragrant.

-Add cumin, red chilli crushed, coriander, pink salt, chaat masala powder, chicken powder, turmeric powder, lemon juice, mix well, cook on medium flame for 1-2 minutes.

-Add boiled potatoes, crush with hands mix well & cook on medium flame for 1-2 minutes.

-Add mint leaves, fresh coriander, mix well, potato filling is ready, take out & let it cool completely.

-Take out the dough on a flat surface, knead again until smooth & take 50g of the dough ball.

-Roll out with the help of a rolling pin (5 inches), add potato filling (3-4 tbs), make cuts & wrap dough strips over potato filling & make potli shape samosa, apply slurry to seal it. (Makes 9-10)

-In a wok, add cooking oil & heat it (140 C-150 °C).

-Add prepared potli samosa, fry on low flame until golden & crispy.

-Serve with ketchup or any desired sauce!
