Ingredients:
Prepare Dough:
-Warm water ¾ Cup
-Bareek cheeni (Caster sugar) 1 tbs
-Khameer (Instant yeast) 2 & ½ tsp
-Maida (All-purpose flour) sifted 3 & ½ Cups
-Namak (Salt) 1 & ½ tsp or to taste
-Cooking oil 2 tbs
-Dried oregano 1 tsp
-Olper’s milk warm ¾ Cup or as required
-Cooking oil 1 tsp
Prepare Afghani Tikka Boti:
-Olper’s Cream ½ Cup
-Hari mirch (Green chilli) crushed 1 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Dahi (Yogurt) 2-3 tbs
-Lemon juice 1 tbs
-Namak (Salt) 1 tsp or to taste
-Kali mirch (Black pepper) crushed 1 tsp
-Safed mirch powder (White pepper powder) ½ tsp
-Elaichi powder (Cardamom powder) ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Chicken boneless small cubes 400g
-Cooking oil 2 tbs
-Koyla (Charcoal) for smoke
Prepare Creamy Sauce:
-Olper’s cream 200ml
-Olper’s cheddar cheese grated ½ Cup
-Dried oregano ½ tbs
-Lehsan (Garlic) cloves 3
-Namak (Salt) ½ tsp or to taste
-Dried parsley ½ tbs
-Lemon juice 2 tbs
-Sugar powdered ½ tsp
-Mayonnaise ¾ Cup
Assembling:
-Mozzarella cheese grated
-Pizza sauce
-Shimla mirch (Capsicum) julienne
-Pyaz (Onion) sliced
-Black olives sliced
-Olper’s cheddar cheese grated
-Olper’s mozzarella cheese grated
-Pickled jalapenos sliced
-Dried oregano
Directions:
Prepare Pizza Dough:
-In a small jug,add warm water,sugar,instant yeast & mix well,cover & let it rest for 5 minutes & set aside.
-In a bowl,add all-purpose flour,salt,cooking oil & mix well until it crumbles.
-Add dried oregano & mix well.
-Add yeast mixture & mix well.
-Gradually add warm milk & knead until dough is formed,grease with cooking oil,cover & let it proof for 1 hour (warm place).
Prepare Afghani Tikka Boti:
-In a bowl,add cream,green chilli,ginger garlic paste,yogurt,lemon juice,salt,black pepper crushed, white pepper powder,cardamom powder,cumin powder & whisk well.
-Add chicken and mix well,cover & marinate for 15-20 minutes.
-In a frying pan,add cooking oil and marinated chicken,mix well & cook for 1-2 minutes,cover & cook on medium flame for 8-10 minutes then cook on high flame until dries up (approx. 4-5 minutes).
-Give a coal smoke for 1-2 minutes & set aside.
Prepare Creamy Sauce:
-In a blender jug,add cream,cheddar cheese,dried oregano,garlic,salt,dried parsley,lemon juice, sugar,mayonnaise,blend well & set aside.
-Knead dough again until smooth.
-Divide the dough into half,take one part and divide into two portions,one small dough is 150g and the other dough in 220g.
-Take a small dough (150g),sprinkle dry flour & roll out thin dough with the help of rolling pin (11-inch) and prick with fork.
-Heated griddle,place rolled dough and cook for 1 minute each side & set aside.
-Take another dough (220g),sprinkle dry flour & rolled out with the help of rolling pin (12-inch round),place on pizza rack and prick with fork.
Assembling:
-On rolled dough,add & spread creamy sauce (leaving the sides around 1-inch).
-Add mozzarella cheese,apply water on the edges,place prepared flat bread (11 inches),get the sides closer & seal tight.
-Add & spread pizza sauce,add afghani tikka boti,capsicum,onion,black olives,cheddar cheese, mozzarella cheese,pickled jalapenos & dried oregano.
-Bake in preheated oven at 200C for 10-12 minutes (on both grills) (makes 2 large pizza).
-Cut into slices & serve!

-Chotay jug mein neem garam pani,cheeni aur khameer dal ker ache tarhan mix karein aur dhak ker 5 minutes kliya chor dein & side per rakh dein.
-Bowl mein maida,namak aur cooking oil dal dein aur crumble hunay tak ache tarhan mix ker lein.
-Dried oregano dal ker ache tarhan mix karein.
-Khameer mixture dal ker ache tarhan mix ker lein.
-Thora thora ker ka neem garam doodh shamil karein aur ghond ker dough tayyar ker lein,cooking oil sa grease ker lein aur dhak ker ek hour garam jagha proof hunay kliya rakh dein.
Prepare Afghani Tikka Boti:
-Bowl mein cream,hari mirch,adrak lehsan paste,dahi,lemon juice,namak,kali mirch crushed,safed mirch powder,elaichi powder aur zeera powder dal ker ache tarhan whisk ker lein.
-Chicken dal ker ache tarhan mix karein aur dhak ker 15-20 minutes kliya marinate ker lein.
-Frying pan mein cooking oil aur marinated chicken dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein aur dhak ker darmiyani ancch per 8-10 minutes kliya paka lein phir tez ancch per dry ho janay tak paka lein (approx. 4-5 minutes).
1-2 minutes kliya koyla ka dhuwan dein & side per rakh dein.
Prepare Creamy Sauce:
-Blender jug mein cream,cheddar cheese,dried oregano,lehsan,namak,dried parsley,lemon juice,cheeni aur mayonnaise dal ker ache tarhan blend ker lein & side per rakh dein.
-Dough ko smooth hunay tak dubara ghond lein.
-Dough ko do hisson mein divide ker lein,ek portion lein aur do hisson mein divide ker lein,ek dough 150g aur dosra dough 220 ho.
-Chota dough lein (150g) aur maida chirak ker rolling pin ki madad sa thin bail lein (11-inch) aur fork ki madad sa prick ker lein.
-Tawa garam karein aur rolled dough rakh ker cook ker lein (1 minute each side) & side per rakh dein.
-Dosra dough lein (220g),maida chirak dein aur rolling pin ki madad sa bail lein (12-inch round),pizza rack per rakh dein aur fork ki madad sa prick ker lein.
Assembling:
-Rolled dough per creamy sauce dal ker pheela lein (leaving the sides around 1-inch).
-Mozzarella cheese dal dein, dein,edges per pani laga lein aur tayyar flat bread (11 inches) rakh aur sides ko close ker ka seal ker lein.
-Pizza sauce dal ker pheela lein,afghani tikka boti,shimla mirch,pyaz,black olives,cheddar cheese, mozzarella cheese,pickled jalapenos aur dried oregano dal dein.
-Preheated oven mein 200C per 10-12 minutes kliya bake ker lein (on both grills) (makes 2 large pizza).
-Slices mein cut ker ka saath serve karein.
