Ingredients:
-Cooking oil 1-2 tbs
-Chicken qeema (Mince) 250g
-Soy sauce ¾ Cup
-Himalayan pink salt ¼ tsp or to taste
-Kali mirch (Black pepper) crushed 1 tbs
-Lal mirch (Red chilli) crushed 1 tsp
-Pyaz (Onion) chopped ½ Cup
-Hara pyaz (Spring onion) leaves chopped 1 Cup
-Maida (All-purpose flour) 1 & ½ Cup
-Himalayan pink salt ½ tsp or to taste
-Cooking oil 2 tbs
-Water 1 Cup or as required
-Makhan (Butter) 3 tbs
-Lehsan (Garlic) chopped 1 tsp
-Mushrooms sliced ¼ Cup
-Cream 300ml
-Doodh (Milk) 200ml
-Lal mirch (Red chilli) crushed ¼ tsp
-Safed mirch powder (White pepper powder) ¼ tsp
-Himalayan pink salt ¼ tsp or to taste
-Kali mirch (Black pepper) crushed ½ tsp
-Chicken yakhni (Stock) ¼ Cup or as required
-Lal mirch (Red chilli) crushed
-Dried oregano
Direction:
-In frying pan,add cooking oil,chicken mince & mix well until it changes color.
-Add soy sauce,pink salt,black pepper crushed,red chilli crushed,mix well & cook on high flame until it dries up.
-Add onion,mix well & cook for 1-2 minutes.
-Let it cool.
-Add spring onion,mix well & set aside.
-In a bowl,add all-purpose flour,pink salt,cooking oil & mix well.
-Gradually add water,mix well & knead until soft dough is formed,cover with cling film & let it rest for 15-20 minutes.
-Sprinkle dry flour & knead dough again until smooth then divide into 3 parts.
-Take one part,make a ball,sprinkle dry flour & roll out with the help of rolling pin (as thin as possible).
-Cut 5 to 6 round shapes with the help of (3 inch) cutter & cover with kitchen towel.
-On rolled dough,add prepared filling,fold it & shape the tortellini.
-Repeat the step with the remaining dough (makes 30-35).
-Place greased baking paper in bamboo steamer & add 5-6 tortellini.
-In a boiling water,add bamboo steamer,cover & cook on low flame for 7-8 minutes.
-Dip tortellini in dry flour & can be stored for up to 2-3 weeks in freezer.
-Do not thaw,direct steam on medium flame for 7-8 minutes.
-In a frying pan,add butter & let it melt.
-Add garlic,mix well & fry until light golden.
-Add mushrooms,mix well & cook for a minute.
-Turn off the flame,add cream & mix well.
-Turn on the flame,gradually add milk & whisk well.
-Add red chilli crushed,white pepper powder,pink alt,black pepper crushed & mix well.
-Add chicken stock,mix well & cook on low flame for 2-3 minutes.
-Now add steamed tortellini & give it a good mix.
-Sprinkle red chilli crushed,dried oregano & serve!

-Frying pan cookinh oil aur chicken qeema dal dein aur rang tabdeel ho janay tak ache tarhan mix ker lein.
-Soy sauce,pink salt,kali mirch crushed aur lal mirch crushed dal ker ache tarhan mix karein aur tez ancch per sukh janay tak paka lein.
-Pyaz dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein.
-Thanda ker lein.
-Hara pyaz dal ker mix karein & side per rakh dein.
-Bowl mein maida,pink salt aur cooking oil dal ker ache tarhan mix ker lein.
-Thora thora ker ka pani shamil karein aur ghond ker soft dough tayyar ker lein,cling film sa cover karein aur 15-20 minutes kliya chor dein.
-Maida chirak dein aur ghond ler smooth dough tayyar ker lein aur 3 parts mein divide ker lein.
-Ek part la ker ball bana lein aur maida chirak ker rolling pin ki madad sa bail lein (as thin as possible).
-Cutter (3 inch) ki madad sa 5-6 rounds cut ker lein aur kitchen towel sa cover ker lein.
-Rolled dough per tayyar filling dal ker fold ker lein tortellini ki shape bana lein.
-Is he tarhan baqi bhi bana lein (makes 30-35).
-Bamboo steamer per greased baking paper rakh dein aur 5-6 tortellini rakh dein.
-Boiling water mein bamboo steamer rakh dein aur dhak ker halki ancch per 7-8 minutes kliya paka lein.
-Tortellini ko maida mein dip karein & 2-3 weeks kliya freezer mein store ker saktay han.
-Thaw nahi kerna hai aur darmiyani ancch per 7-8 minutes kliya steam cook ker lein.
-Frying pan mein makhan dal ker melt ker lein.
-Lehsan dal ker ache tarhan mix karein aur light golden ho janay tak fry ker lein.
-Mushrooms dal ker ache tarhan mix karein aur ek minute kliya paka lein.
-Chulha bund ker dein aur cream dal ker ache tarhan mix ker lein.
-Chulha on karein aur thora thora ker ka doodh shamil karein aur ache tarhan whisk ker lein.
-Lal mirch crushed,safed mirch powder,pink salt aur kali mirch crushed dal ker ache tarhan mix ker lein.
-Chicken yakhni dal ker ache tarhan mix karein aur halki ancch per 2-3 minutes kliya paka lein.
-Ab steamed tortellini dal ker mix ker lein.
-Lal mirch crushed aur dried oregano dal ker serve karein!
