Alfredo Tortellini

Ingredients:

-Cooking oil 1-2 tbs

-Chicken qeema (Mince) 250g

-Soy sauce ¾ Cup

-Himalayan pink salt ¼ tsp or to taste

-Kali mirch (Black pepper) crushed 1 tbs

-Lal mirch (Red chilli) crushed 1 tsp

-Pyaz (Onion) chopped ½ Cup

-Hara pyaz (Spring onion) leaves chopped 1 Cup

-Maida (All-purpose flour) 1 & ½ Cup

-Himalayan pink salt ½ tsp or to taste

-Cooking oil 2 tbs

-Water 1 Cup or as required

-Makhan (Butter) 3 tbs

-Lehsan (Garlic) chopped 1 tsp

-Mushrooms sliced ¼ Cup

-Cream 300ml

-Doodh (Milk) 200ml

-Lal mirch (Red chilli) crushed ¼ tsp

-Safed mirch powder (White pepper powder) ¼ tsp

-Himalayan pink salt ¼ tsp or to taste

-Kali mirch (Black pepper) crushed ½ tsp

-Chicken yakhni (Stock) ¼ Cup or as required

-Lal mirch (Red chilli) crushed

-Dried oregano

 

Direction:

-In frying pan,add cooking oil,chicken mince & mix well until it changes color.

-Add soy sauce,pink salt,black pepper crushed,red chilli crushed,mix well & cook on high flame until it dries up.

-Add onion,mix well & cook for 1-2 minutes.

-Let it cool.

-Add spring onion,mix well & set aside.

-In a bowl,add all-purpose flour,pink salt,cooking oil & mix well.

-Gradually add water,mix well & knead until soft dough is formed,cover with cling film & let it rest for 15-20 minutes.

-Sprinkle dry flour & knead dough again until smooth then divide into 3 parts.

-Take one part,make a ball,sprinkle dry flour & roll out with the help of rolling pin (as thin as possible).

-Cut 5 to 6 round shapes with the help of (3 inch) cutter & cover with kitchen towel.

-On rolled dough,add prepared filling,fold it & shape the tortellini.

-Repeat the step with the remaining dough (makes 30-35).

-Place greased baking paper in bamboo steamer & add 5-6 tortellini.

-In a boiling water,add bamboo steamer,cover & cook on low flame for 7-8 minutes.

-Dip tortellini in dry flour & can be stored for up to 2-3 weeks in freezer.

-Do not thaw,direct steam on medium flame for 7-8 minutes.

-In a frying pan,add butter & let it melt.

-Add garlic,mix well & fry until light golden.

-Add mushrooms,mix well & cook for a minute.

-Turn off the flame,add cream & mix well.

-Turn on the flame,gradually add milk & whisk well.

-Add red chilli crushed,white pepper powder,pink alt,black pepper crushed & mix well.

-Add chicken stock,mix well & cook on low flame for 2-3 minutes.

-Now add steamed tortellini & give it a good mix.

-Sprinkle red chilli crushed,dried oregano & serve!
