Aloe Vera Sooji Halwa

Ingredients:

-Aloe Vera leaves 2 large

-Hot water as required

-Himalayan pink salt 1 tsp

-Water 1 Cup

-Sooji (Semolina) roasted 1 Cup

-Gur (Jaggery) crushed 150g

-Water ¼ Cup

-Desi ghee (Clarified butter) ½ Cup

-Elaichi powder (Cardamom powder) ½ tsp

-Khopra (Desiccated coconut) ¼ Cup

-Pista (Pistachios) chopped 2-3 tbs

-Badam (Almonds) chopped 2-3 tbs

-Milk powder 1/3 Cup

-Badam (Almonds) sliced

-Pista (Pistachios) sliced

 

Directions:

-Wash fresh aloe vera leaves & let it rest in standing position to release the yellow liquid for 1-2 hours.

-Yellow liquid is aloe latex, it is toxic & bitter,it should not be ingested.

-Cut & remove the end from which the secretion is released,wash thoroughly then remove thorny sides & green skin & remove its gel.

-In a bowl,add aloe vera gel (250g),hot water,pink salt,mix well & let it soak for 5 minutes then wash few times & strain.

-In a bowl,add strained aloe vera gel,water & blend well.

-Add semolina,whisk well & set aside.

-In the wok,add jaggery,water,cover & cook on low flame until jaggery melts (2-3 minutes).

-Add clarified butter,cardamom powder,mix well & cook for 4-5 minutes.

-Now add aloe vera & semolina mixture,mix well & cook on low flame for 4-5 minutes & mix continuously.

-Add desiccated coconut,almonds,pistachio,milk powder & mix well,cover & cook on low flame for 4-5 minutes.

-Garnish with almonds,pistachio & serve warm.

-It can be stored in refrigerator for up to 2 weeks.
