Ingredients:
-Baisan (Gram flour) 1 & ½ Cup
-Chawal ka atta (Rice flour) 2-3 tbs
-Lal mirch (Red chilli) crushed ¼ tsp or to taste
-Zeera (Cumin seeds) ¼ tsp
-Himalayan pink salt ½ tsp or to taste
-Orange food color ¼ tsp
-Baking soda 1 pinch
-Ajwain (Carom seeds) ¼ tsp
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
-Hara dhania (Fresh coriander) chopped 1 tbs
-Water ½ Cup or as required
-Aloo (Potatoes) boiled 4-5 medium
-Matar (Peas) boiled 1 Cup
-Adrak lehasan paste (Ginger garlic paste) 1 tsp
-Hari mirch (Green chilli) finely chopped 1 tbs
-Chaat masala 1 tsp
-Sabut dhania (Coriander seeds) crushed 1 & ½ tsp
-Zeera powder (Cumin powder) 1 tsp
-Himalayan pink salt 1 tsp or to taste
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Haldi powder (Turmeric powder) ¼ tsp
-Garam masala powder ¼ tsp
-Lemon juice 1 tbs
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Cooking oil for frying
-Water 2-3 tbs
-Hari mirch (Green chillies) deseeded 6-8 or as required
-Curry patta (Curry leaves) handful
Directions:
-In a bowl,add gram flour,rice flour,red chilli crushed,cumin seeds,pink salt,orange food color,baking soda,carom seeds,ginger garlic paste,fresh coriander,water & whisk well to make a smooth batter & set aside.
-In a bowl,add potatoes,peas & mash well.
-Add ginger garlic paste,green chilli,chaat masala,coriander seeds,cumin powder,pink salt,red chilli powder,turmeric powder,garam masala powder,lemon juice,fresh coriander & mix until well combined.
-Grease hands with oil,take 25g of potato mixture & make tikki/patty of equal sizes (makes 38-40).
-In a wok,heat cooking oil.
-Dip tikki/patty into gram flour batter & fry on medium flame until crispy.
-Add water in remaining gran flour mixture,dip green chilli & fry on medium flame until crispy.
-Add curry leaves & fry on medium flame until crispy.
-Serve with slider buns & green chutney!

-Bowl mein baisan,chawal ka atta,lal mirch crushed,zeera,pink salt,orange food color,baking soda, ajwain,adrak lehsan paste,hara dhania aur pani dal dein aur ache tarhan whisk ker ka smooth batter bana lein & side par rakh dein.
-Bowl mein aloo aur matar dal kar ache sa mash kar lein.
-Phir ismein adrak lehsan paste,hari mirch,chaat masala,sabut dhania,zeera,pink salt,lal mirch powder,haldi powder,garam masala powder,lemon juice aur hara dhania dal ker ache sa mix ker lein.
-Achhi tarah mix karein.
-Haathon ko oil sa grease karein aur 25g mixture la ker equal size ki tikki/patty bana lein (makes 38-40).
-Karhai mein cooking oil garam karein.
-Tikki/patty ko batter mein dip karein aur darmiyani ancch per crispy ho janay tak fry ker lein.
-Remaining gram flour mixture mein pani dal ker mix karein aur hari mirch dip karein aur darmiyani ancch per crispy ho janay tak fry ker lein.
-Curry patta ko darmiyani ancch per crispy ho janay tak fry ker lein.
-Slider buns & green chutney ka saath serve karein!
