Ingredients:
Prepare Street Style Yogurt Sauce (For Paratha Roll):
-Dahi (Yogurt) 1 Cup
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Zeera (Cumin seeds) roasted & crushed ¼ tsp
-Chicken powder 1 tsp
-Himalayan pink salt ¼ tsp or to taste
-Hari mirch (Green chillies) 2
-Tatri (Citric acid) ¼ tsp
-Lehsan (Garlic) cloves 2
-Hara dhania (Fresh coriander) with stem 1 tbs
Prepare Beef Boti Kabab:
-Boneless beef (preferably undercut) 500g
-Himalayan pink salt 1 tsp or to taste
-Adrak lehsan paste (Ginger garlic paste) 1 tbs
-Kacha papita (Raw papaya) paste 1 & ½ tsp (skip if using undercut beef)
-Lemon juice 1 & ½ tbs
-Dahi (Yogurt) whisked 3 tbs
-Hari mirch (Green chilli) paste ½ tbs
-Dhania powder (Coriander powder) ½ tbs
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Zeera powder (Cumin powder) 1 & ½ tsp
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tsp
-Garam masala powder ½ tsp
-Cooking oil 1-2 tbs
-Koyla (Charcoal) for smoke
-Paratha
-Pyaz (Onion) rings
-Hara dhania (Fresh coriander) chopped
-Imli aloo bukhara chutney
Directions:
Prepare Street Style Yogurt Sauce (For Paratha Roll):
-In a blending jar,add yogurt,red chilli powder,cumin seeds,chicken powder,pink salt,green chillies,citric acid,garlic,fresh coriander & blend well.Street style yogurt sauce is ready!
Prepare Beef Boti Kabab:
-In a bowl,add beef,pink salt,ginger garlic paste,papaya paste,lemon juice & mix well,cover & marinate for 2 hours.
-Add yogurt,green chilli paste,coriander powder,turmeric powder,red chilli powder,cumin powder, kashmiri red chilli powder,garam masala powder & mix well,cover & marinate for 30 minutes.
-Thread marinated beef in a wooden skewer (wooden skewers soaked in water for 30 minutes) (make 10).
-On a griddle,add cooking oil,beef skewers,cover & cook on low flame for 10-12 minutes (turn sides in between).
-Give coal smoke for 2 minutes.
-On paratha,add beef boti kabab,onion rings,fresh coriander,prepared street style yogurt sauce,imli aloo Bukhara chutney,fold & wrap in butter paper & serve !

-Blending jar mein dahi,lal mirch powder,zeera,chicken powder,pink salt,hari mirchein,tatri,lehsan aur hara dhania dal kar achi tarah blend kar lein.Street style yogurt sauce tayyar hai!
Prepare Beef Boti Kabab:
-Bowl mein beef,pink salt,adrak lehsan paste,papita paste aur lemon juice dal kar mix karein aur dhak ker 2 hours kliya marinate ker lein.
-Dahi,hari mirch paste,dhania powder,haldi powder,lal mirch powder,zeera powder,kashmiri lal mirch powder aur garam masala powder daal kar mix karein aur dhak ker 30 minutes kliya marinate ker lein.
-Marinated beef ko wooden skewer mein laga lein (skewers ko 30 minutes pani mein bhigo kar rakhein) (make 10).
-Tawa per cooking oil dal dein aur beef skewers ko dhak ker halki ancch per 10-12 minutes kliya paka lein (beech beech mein side badalte rahein).
-2 minutes kliya koyla ka dhuwan dein.
-Paratha per beef boti kabab,pyaz rings,hara dhania,tayyar street style yogurt sauce aur imli aloo Bukhara chutney dal kar roll bana lein aur butter paper mein wrap ker ka serve karein.
