Ingredients:
Prepare Kadhi:
-Dahi (Yogurt) ½ kg
-Baisan (Gram flour) roasted ½ Cup
-Lal mirch powder (Red chilli powder) 1 & ½ tsp or to taste
-Himalayan pink salt 1 tsp or to taste
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Garam masala powder ½ tsp
-Haldi powder (Turmeric powder) 1 tsp
-Sabut dhania (Coriander seeds) crushed 1 & ½ tsp
-Water 1.5-2 Litres
-Pyaz (Onion) sliced 1 medium
Prepare Pakora:
-Baisan (Gram flour) sifted 2 Cups
-Pyaz (Onion) sliced 3 medium
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Haldi powder (Turmeric powder) 1 tsp
-Baking soda 1 tsp
-Sabut dhania (Coriander seeds) crushed ½ tbs
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Himalayan pink salt 1 tsp or to taste
-Hari mirch (Green chilli) chopped 1-2
-Hara dhania (Fresh coriander) chopped handful
-Water 1 Cup or as required
-Cooking oil for frying
Prepare Butter Tarka:
-Nurpur Butter salted 100g
-Cooking oil 1 tbs
-Pyaz (Onion) sliced 1 small
-Lehsan (Garlic) sliced 3 cloves
-Zeera (Cumin seeds) 1 tsp
-Sabut lal mirch (Button red chillies) 7-8
-Curry patta (Curry leaves) 12-15
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tsp (optional)
Directions:
Prepare Kadhi:
-In a pot,add yogurt,gram flour,red chilli powder,pink salt,ginger garlic paste,garam masala powder, turmeric powder,coriander seeds & whisk well.
-Add water & mix well.
-Add onion & mix well.
-Turn on the flame,bring it to boil,cover & cook on low flame for 2 hours or until its done.
Note:
-Check & stir in between.
-If required becomes too thick, add water.
-It it’s runny/thin,add dissolved gram flour (roasted) & continue cooking.
Prepare Pakora:
-In a bowl,add gram flour,onion,ginger garlic paste,turmeric powder,baking soda,coriander seeds,red chilli powder,pink salt,green chilli,fresh coriander,gradually add water & mix well,cover & let it rest for 5 minutes.
-In a wok,heat cooking oil & fry pakoras on medium flame until golden brown.
-Add fried pakoras in prepared kadhi while they are still hot & mix well,cover & cook on low flame for 8-10 minutes.
Prepare Buttter Tarka:
-In a frying pan,add butter,cooking oil & let it melt.
-Add onion,garlic & fry until light golden.
-Add cumin seeds,button red chillies,curry leaves & mix well.
-Add kashmiri red chilli powder & mix well.
-Pour prepared butter tarka in kadhi & mix well.
-Serve butter tarka kadhi with rice!

-Pani dal ker ache tarhan mix ker lein.
-Pyaz dal ker ache tarhan mix karein.
-Chulha bund ker dein aur ubal anay ka bad dhak dein aur halki ancch per 2 hour kliya paka lein.

-Bowl mein baisan,pyaz,adrak lehsan paste,haldi powder,baking soda,sabut dhania,lal mirch powder,pink salt,hari mirch,hara dhania aur thora thora ker ka pani shamil karein aur ache tarhan mix ker leuin,dhak dein aur 5 minutes kliya chor dein.
-Karahi mein cooking oil garam karein aur pakoray ko darmiyani ancch per golden brown ho janay tak fry ker lein.
-Fried pakoras ko tayyar kadhi mein dal ker mix ker lein aur dhak ker halki ancch per 8-10 minutes kliya paka lein.

-Chotay frying pan mein makhan aur cooking oil dal ker melt ker lein.
-Pyaz aur lehsan dal ker light golden ho janay tak fry ker lein.
-Zeera,sabut lal mirch aur curry patta dal ker ache tarhan mix ker lein.
-Kashmiri red chilli powder dal ker ache tarhan mix karein.
-Tayyar butter tarka ko kadhi mein dal ker mix ker lein.
-Butter tarka kadhi ko chawal ka saath serve karein!
