Ingredients:
Prepare Chipotle Chicken:
-Boneless chicken cubes 500g
-Lal mirch (Red chilli) crushed ½ tsp
-Zeera powder (Cumin powder) ½ tsp
-Chicken powder 1 tsp
-Paprika powder ½ tsp
-Cayenne pepper powder ½ tsp
-Oregano (Dried) 1 tsp
-Lehsan (Garlic) finely chopped 1 tsp
-Chipotle sauce 2 tbs
-Lemon juice ½ tbs
-Fresh parsley (chopped) handful
-Olive oil 1 tbs
-Water 2-3 tbs
-Olive oil 1 tbs
Prepare Tomato Salsa:
-Tamatar (Tomatoes) ⅓ Cup
-Pyaz (Onion) small diced ⅓ cup
-Fresh parsley (chopped) handful
-Jalapenos chopped 2 tbs
-Lehsan (Garlic) Chopped
-Hot sauce 1 tbs
-Iodized Himalayan pink salt 1 pinch
-lemon juice ½ tbs
Assembling:
-Greek yogurt as required
-Boiled rice as required
-Sweet corn as required
-Tortilla chips as required (Substitute: Toasted pita bread)
-Ice berg as required
Direction:
Prepare Chipotle Chicken:
-In a bowl, add chicken, red chilli crushed, cumin powder, chicken powder, paprika powder, cayenne pepper powder, oregano, garlic, chipotle sauce, lemon juice, fresh parsley, olive oil & mix well.
-Cover & let it marinate for 1 hour.
-In a pan, add olive oil, heat it, add marinated chicken, mix well & cook on medium flame for 2 minutes or until it changes color.
-Add water & mix well.
-Cover & cook on low flame until chicken is tender.
Prepare Tomato Salsa:
-In a bowl, add tomato, onion, fresh parsley, jalapenos, garlic, tabasco sauce, pink salt, lemon juice, mix well, tomato salsa is ready, set aside.
Assembling:
-In a serving dish, place a small bowl in the center, add yogurt sauce in the bowl, add prepared chipotle chicken, boiled rice, prepared tomato salsa, sweet corn, tortilla chips, ice-berg & serve!
