Ingredients:
- Gajar (Carrots) 2 medium
- Band gobhi (Cabbage) half
- Bhutta (Sweet corn) 1 medium
- Adrak (Ginger) 2-inch piece
- Hara pyaz (Spring onion) 2 stems
- Pyaz (Onion) 1 large
- Mushrooms 5-6
- Boiling water 2 & ½ litres
- Lehsan (Garlic) peeled 2 cloves
- Tez patta (Bay leaves) 2
- Laung (Cloves) 2
- Namak (Salt) 1 & ½ tsp or to taste
- Kali mirch (Black pepper) whole 1 tsp
- Cooking oil 2 tbs
- Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp
- Namak (Salt) 1 tsp or to taste
- Sirka (Vinegar) 1 tbs
- Soy sauce 1 & ½ tbs
Directions:
Note: All vegetables must be washed thoroughly before cutting.
Peel carrots,cut its tip & stem part and collect them on a plate.
Now cut carrots into slices & reserve for later use.
Remove one layer of cabbage and cut the stem part and collect it on plate.
Now chop cabbage & reserve for later use.
Peel sweet corn & collect its hairs on plate.
Remove corn kernels & reserve for later use and collect remaining corn bone on plate.
Slice ginger with its skin & place it on plate.
Cut roots & tail parts of spring onion leaves & collect them on plate.
Now chop spring onion leaves & reserve for later use.
Cut spring onion white part & collect it on plate.
Cut onion into half,remove its head part & collect it on plate.
Remove onion peel & collect 1st layer of onion on plate (reserve for vegetable stock (yakhni)).
Now chop onion & reserve for later use.
Slice mushrooms & reserve for soup.
In boiling water,add all peels of vegetables from the plate,garlic,bay leaves,cloves,salt,black pepper whole (crush with the help of grinder crusher mill shakers) & mix well,bring it to boil,cover & cook on low flame for 15-20 minutes.
Now strain the stock with the help of strainer,discard residues.Homemade vegetable stock (Yakhni) is ready & reserve stock for later use.
In a pot,add cooking oil,reserved all chopped vegetables,mix well & sauté for 1-2 minutes.
Add ginger garlic paste & mix well for 1-2 minutes.
Add perapaed vegetable stock,mix well & bring it to boil.
Add salt,vinegar,soy sauce & mix well,cover & cook on low flame for 10-15 minutes.
Serve hot!

Band gobhi ki ek layer nikal lein aur stem ko cut ker ka plate mein jama ker lein.
Ab band gobhi ko chop ker lein aur bad mein use kernay kliya side per rakh dein.
Bhuttay ko peel ker lein aur hairs ko plate mein jama ker lein.
Corn kernels ko nikal lein aur bad mein use kernay kliya side per rakh dein aur corn bone ko plate mein jama ker lein.
Adrak ko skin ka saath slice ker lein aur plate mein dal dein.
Hara pyaz ki roots aur leaves ki tail parts ko cut karein aur plate mein jama ker lein.
Ab hara pyaz leaves ko chop ker lein aur bad mein use kernay kliya side per rakh dein.
Hara pyaz white part ko cut ker lein aur plate mein jama ker lein.
Pyaz ko half mein cut karein aur heat ko remove ker ka plate mein jama ker lein.
Pyaz ka chelkay ko remove ker lein aur 1st layer ko plate mein jama ker lein (reserve for vegetable stock (yakhni)).
Pyaz ko chop ker ka bad mein use kernay kliya side per rakh dein.
Mushrooms ko slice ker lein aur soup banana kliya side per rakh dein.
Boiling water mein plate mein sa tamam vegetables ki peels,lehsan,tez patta,laung,namak aur kali mirch whole (crush with the help of grinder crusher mill shakers) dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per 15-20 minutes kliya paka lein
Ab tayyar vegetable yakhni ko strainer ki madad sa strain ker kein aur resides ko discard ker dein.Homemade vegetable yakhni tayyar hai aur bad mein kernay kliya side per rakh dein.
Pot mein cooking oil aur tamam reserved chopped vegetables dal ker ache tarhan mix karein aur 1-2 minutes kliya sauté ker lein.
Adrak lehsan paste dal dein aur 1-2 minutes kliya ache tarhan mix ker lein.
Strained yakhni dal ker ache tarhan mix karein aur ubal anay dein.
Namak,sirka aur soy sauce dal ker ache tarhan mix karein aur dhak ker halki ancch per 10-15 minutes kliya paka lein.
