Ingredients:
Prepare Biscuit Base:
-Coconut cookies 10 biscuits approx.
-Makhan (Butter) melted 30g
Prepare Coconut Cheesecake Layer (with Yogurt):
-Dahi (Yogurt) 250g
-Ice cubes as required
-Cream chilled 200ml
-Sugar powdered ½ Cup
-Coconut milk powder 4 tbs
-Lemon juice 1 tsp
-Coconut essence 1 tsp
Prepare Coconut Biscuit Truffles for Garnish:
-White chocolate grated 30g
-Cream 1 tbs (room temperature)
-Semi sweetened dark chocolate melted ½ Cup or as required
-Coconut shavings roasted as required
-Podina (Mint leaves)
Directions:
Prepare Biscuit Base:
-In a chopper,add coconut crunch cookies & chop well.
-Take out 4 tbs of crumbled biscuits & reserve for later use.
-In remaining crumbled biscuits,add butter & chop until well combined & set aside.
Prepare Coconut Cheesecake Layer (with Yogurt):
-On a bowl,place a strainer & muslin cloth,add yogurt,tie to make a knot & let it strain for 4-5 hours to drain all the water from yogurt & set aside.
-In a large bowl,add ice cubes & place another bowl on it.
-Add cream & beat well for 2-3 minutes.
-Add strained yogurt,sugar,coconut powder,lemon juice,coconut essence & beat until well combined & transfer to a piping bag.
Prepare Coconut Biscuit Truffles for Garnish:
-In a bowl,add white chocolate,cream,mix well & microwave for a minute then mix well until smooth.
-Add reserved crumbled biscuits,mix until well combined & refrigerate for 20 minutes.
-Take out 1 tsp of mixture (10g) & make smooth round balls.
-Coat with melted chocolate & place them on a baking paper until chocolate is set.
Assembling:
-In a serving cup,add prepared biscuit crumbles & press firmly to set an even layer.
-Pipe out a layer of prepared coconut cheesecake,add roasted coconut shavings & pipe out another layer of prepared coconut cheesecake.
-Cut prepared coconut truffle in half,decorate prepared cups with coconut truffles,mint leaf & serve chilled (makes 6).

-Bowl mwin strainer aur malmal ka kapra rakh dein aur dahi dal ker knot laga lein aur 4-5 hours kliya strain ker lein & side per rakh dein.
-Large bowl mein ice cubes dal ker upper sa ek aur bowl rakkh dein.
-Cream dal ker 2-3 minutes kliya beat ker lein.
-Strained dahi,cheeni,coconut powder,lemon juice aur coconut essence dal ker ache tarhan beat ker lein aur piping bag mein transfer ker lein.
Prepare Coconut Biscuit Truffles for Garnish:
-Bowl mein white chocolate aur cream dal ker ache tarhan mix karein aur ek minute kliya microwave ker lein phir smooth ho janay tak ache tarhan mix ker lein.
-Reserved crumbled biscuits dal ker ache tarhan mix ker lein aur 20 minutes kliya refrigerate ker lein.
-1 tsp mixture (10g) la ker smooth round balls bana lein.
-Melted chocolate mein coat ker lein aur baking paper per chocolate set ho janay tak rakh dein.
Assembling:
-Serving cup mein tayyar biscuit crumbles dal dein aur firmly press ker ka even layer bana lein.
-Tayyar coconut cheesecake,roasted coconut shavings aur tayyar coconut cheesecake ki layer laga lein.
-Tayyar coconut truffle ko half mein cut ker lein,tayyar cups ko coconut truffles aur podina sa decorate ker ka thanda serve karein (makes 6).
