Ingredients:
Prepare Soup:
-Cooking oil 2 tbs
-Pyaz (Onion) chopped 1 medium
-Lehsan (Garlic) cloves 7-8
-Aloo (Potatoes) diced 2 medium
-Safed chanay (Chickpeas) boiled 1 & ½ Cup
-Himalayan pink salt ½ tsp or to taste
-Paprika powder ½ tsp
-Dhania powder (Coriander powder) 1 tsp
-Kali mirch (Black pepper) crushed 1 tsp or to taste
-Zeera powder (Cumin powder) ½ tsp
-Vegetable stock 5 Cups
-Olper’s Cream ½ Cup
-Fresh parsley chopped 1-2 tbs

Prepare Garlicky Chickpea Topping:
-Cooking oil 2 tbs
-Lehsan (Garlic) chopped 2 tbs
-Safed chanay (Chickpeas) boiled ¾ Cup
-Himalayan pink salt ¼ tsp or to taste
-Lal mirch (Red chilli) crushed ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tsp
-Paprika powder ½ tsp
-Croutons
-Extra virgin olive oil
Directions:
Prepare Soup:
-In a pot,add cooking oil,onion,garlic & sauté for 2-3 minutes.
-Add potatoes,chickpeas,pink salt,paprika powder,coriander powder,black pepper crushed,cumin powder,mix well & cook on medium flame for 2-3 minutes.
-Add vegetable stock & bring it to boil,cover & cook on low flame for 8-10 minutes.
-Turn off the flame & blend well with the help of blender.
-Turn on the flame & cook on medium flame for 8-10 minutes.
-In a bowl,add cream & add ½ cup of soup in cream to temper it.
-Add tempered cream in the pot,mix well & cook on low flame for 4-5 minutes.
-Add fresh parsley & mix well.
Prepare Garlicky Chickpea Topping:
-In a frying pan,add cooking oil,garlic,chickpeas & fry for 3-4 minutes.
-Add pink salt,red chilli crushed,cumin seeds,paprika powder,mix well & cook for 1-2 minutes & set aside.
-Garnish with prepared garlicky chickpea topping,fresh parsley,croutons,olive oil & serve hot!

-Vegetable stock dal ker ubal lein aur dhak ker halki ancch per 8-10 minutes kliya paka lein.
-Chulha bund ker dein aur ache tarhan blend ker lein.
-Chulha on karein aur darmiyani ancch per 8-10 minutes kliya paka lein.
-Bowl mein cream aur ½ cup mixture dal dein aur ache tarhan mix ker lein.
-Tempered cream ko pot mein dal ker ache tarhan mix karein aur halki ancch per 4-5 minutes kliya paka lein.
-Fresh parsley dal ker ache tarhan mix ker lein.

-Frying pan mein cooking oil,lehsan aur safed chanay dal dein aur 3-4 minutes kliya fry ker lein.
-Pink salt,lal mirch crushed,zeera aur paprka powder dal ker ache tarhan mix karein aur 1-2 minutes kliya paka lein & side per rakh dein.
-Tayyar garlicky chickpea topping,fresh parsley,croutons aur olive oil sa garnish ker ka thanda serve karein.
