Ingredients:

Prepare Crispy Pakwan:

-Maida (all-purpose flour) 2 Cup

-Sooji (Semolina) 2 tbs

-Kali mirch (Black pepper) crushed ½ tsp

-Ajwain (Carom seeds) ½ tsp

-Zeera (Cumin seeds) ½ tsp

-Iodized Himalayan pink salt 1 tsp or to taste

-Dalda VTF Banaspati Ghee 4 tbs

-Water ½ Cup or as required

-Dry flour as required

-Dalda cooking oil (For frying)

Prepare Daal:

-Chana daal (Split lentil gram) 1 Cup

-Aloo (Potato) 1 medium

-Lehsan (Garlic) crushed 1 tsp

-Haldi powder (Turmeric powder) ½ tsp

-Water 2 Cups

-Iodized Himalayan pink salt 1 tsp or to taste

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Garam masala powder ½ tsp

-Aamchur powder (Dry mango powder) 1 tsp

Prepare Tadka:

-Dalda VTF Banaspati Ghee 3-4 tbs

-Zeera (Cumin seeds) 1 tsp

-Hari mirch (Green chillies) slitted 2-3

-Curry patta (Curry leaves) 5-6

-Hari Chutney

-Imli ki chutney

-Pyaz (Onion) chopped

-Hara dhania (Fresh coriander) chopped

 

Direction:

Prepare Crispy Pakwan:

-In a bowl, add all-purpose flour, semolina, black pepper crushed, carom seeds, cumin, pink salt, clarified butter, mix until it crumbled.

-Add water gradually, mix & knead until medium hard dough is formed, cover & rest for 10-15 minutes.

-Remove cover, transfer dough on flat surface & knead dough again until smooth

-Take 60g of dough & make a smooth ball.

-Dust dry flour & roll out with the help of a rolling pin (6 inches) prick with a fork. (Makes 8)

-In a wok, add cooking oil, heat it (160 C).

-Add rolled dough & fry on medium flame until golden & crispy.

Prepare Daal:

-In a wok, add chana daal, potato, garlic crushed, turmeric powder, & water mix well.

-Bring it to boil, remove scum, cover & cook on low flame for 10-15 minutes.

-Remove cover, mix well & slightly mash potato with the help of masher.

-Add pink salt & mix well then cook on medium flame for 3-4 minutes.

-In a bowl, add cumin, red chilli powder, garam masala powder, dry mango powder, mix well, daal pakwan spice mix is ready, set aside

Prepare Tadka:

-In a tarka pan, add clarified butter & let it melt.

-Add cumin seeds, green chillies, curry leaves, fry for 30 seconds.

-Pour daal in a serving bowl, add prepared spice mix, then add tadka.

-On a fried pakwan, add prepared daal, spice mix, hari chutney, imli ki chutney, onion & garnish it with fresh coriander, & lemon wedges.
