Ingredients:

-Khajoor (Dates) deseeded 250g
-Doodh (Milk) 1 Cup

-Doodh (Milk) 1 litre
-Olper’s Milk powder ¾ Cup
-Hari elaichi (Green cardamom) crushed ¼ tsp
-Badam (Almonds) roughly chopped 10-12
-Kaju (Cashew nuts) roughly chopped 10-12

-Badam (Almonds) sliced

-Pista (Pistachio) sliced

Directions:

-In a bowl,add dates,milk & soak for 30 minutes.
-In a blending jar,add soaked dates with milk & blend well to make a thick paste & set aside.
-In a wok,add milk,bring it to boil & cook on low flame milk is reduced (18-20 minutes) & stir in between.

-Turn off the flame,add blended paste,milk powder & whisk well.
-Turn on the flame,mix continuously & cook on medium flame until kulfi mixture thickens (5-6 minutes).
-Add green cardamom,almonds,cashew nuts,mix well & cook on medium flame for 1-2 minutes.
-Let it cool while mixing.

-Pour kulfi mixture into matka,sprinkle almonds,pistachios,cover & seal with aluminium foil & freeze for 10-12 hours (makes 6-8).
