Ingredients:

Prepare Creamy Meethi Dahi:

-Dahi (Yogurt) 3 Cups

-Olper’s cream 1 Cup

-Sugar powdered ½ Cup or to taste

-Iodized Himalayan pink salt ½ tsp or to taste

-Doodh (Milk) ¾ Cup

Prepare Imli Chutney:

-Imli pulp (Tamarind pulp) ½ Cup

-Tomato ketchup 3 tbs

-Bareek cheeni (Caster sugar) ½ Cup

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Iodized Himalayan pink salt ½ tsp or to taste

-Water ¼ Cup

Prepare Bhallay:

-Moong daal atta (Yellow lentil flour) 1 & ½ Cup

-Baisan (Gram flour) ½ Cup

-Chawal ka atta (Rice flour) 1 tbs

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zeera (Cumin seeds) Roasted & crushed 1 tsp

-Iodized Himalayan pink salt 1 tsp or to taste

-Water 1 Cup or as required (Add gradually)

-Baking soda ½ tsp

-Water as required

-Cooking oil as required

-Warm water as required

-Iodized Himalayan pink salt ½ tsp or to taste

-Green chutney 1 tbs

Assembling:

Safed chanay (Chickpeas) Boiled as required

Papri as required
Dahi Bada Masala to taste

 

Direction:

Prepare Creamy Meethi Dahi:

In a bowl, add yogurt, olpers cream, milk, pink salt, sugar powder, whisk until smooth & well combined, meethi dahi is ready! set aside.

Prepare Imli Chutney:

-In a bowl, add tamarind pulp, tomato ketchup, fine sugar, red chilli powder, pink salt & water, imli chutney is ready, set aside.

Prepare Bhallay:

-In a bowl, add yellow lentil flour, gram flour, rice flour, red chilli powder, cumin, pink salt, whisk well.

-Add water gradually & whisk well for 6-8 minutes or until fluffy.

-Add baking soda, whisk until well combined.

-Note: To check the consistency of batter, drop 1 tsp of batter in water,if it floats then ready to use.

-Cover & let it rest for 15 minutes.

-In a wok, add cooking oil, heat it (160 C).

-Pour batter with the help of a greased spoon & fry on low flame until golden.

-Take out & let it cool down. (Makes: 18-20)

-In a bowl, add warm water, pink salt, green chutney & mix well. Add fried baray, cover them with a small lid so that they are fully submerged in water for 10-15 minutes.

-Take them out & squeeze gently to remove excess water & add in prepared creamy sweet yogurt.

Assembling:

-In a bowl, add prepared dahi bhallay break them with spoon, sprinkle Dahi bada masala, papri, pour creamy meethi dahi, prepared imli chutney & serve!
