In a wok, add carrots & cook on high flame until completely dries up (6-7 minutes).
Let it cool.
Add cinnamon powder,brown jaggery,mix well & set aside.
In a bowl, add wheat flour, salt, cooking oil & mix well until it crumbles.
Gradually add lukewarm water & knead until the dough is formed, cover & let it rest for 15-20 minutes.
Knead dough again until smooth.
Take a small dough & make two balls, sprinkle dry flour & roll out with the help of a rolling pin.
On working surface sprinkle dry flour, place one rolled dough,add & spread carrot & jaggery filling, apply water on the edges & spread another rolled dough on it, remove air pockets, press & seal the edges with the help of fingers (makes 4-5).
Heat griddle & fry prepared paratha from both sides with ghee.
Serve with tea, fresh cream & chutney!

Thora thora ker ka neem garam pani shamil karein aur ghond ker dough tayyar ker lein aur dhak ker 15-20 minutes kliya rakh dein.
Dough ko smooth hunay tak dubara ghond lein.
Chota dough lein aur do balls bana lein,atta chirak dein aur rolling pin ki madad sa bail lein.
Working surface per atta chirak dein aur ek rolled dough rakh ker us per gajar & gur filling dal ker pheela dein,edges per pani laga lein aur ek aur rolled dough rakh dein,air pockets ko remove ker lein aur edges ko seal ker lein (makes 4-5).
Tawa garam karein aur tayyar paratha ko dono sides sa ghee mein fry ker lein.
Chai,malai aur chutney ka saath serve karein!
