Ingredients:
Prepare Gajar Jamun:
-Gajar (Carrots) peeled & washed 300g
-Sugar 3 tbs or to taste
-Doodh (Milk) ½ Cup
-Ghee (Clarified butter) 2 tbs
-Sooji (Semolina) roasted 2 & ½ tbs
-Doodh (Milk) ½ Cup
-Hari elaichi powder (Green cardamom powder) ½ tsp
Prepare Rabri Doodh:
-Doodh (Milk) 3 Cups
-Condensed milk ½ Cup
-Cornflour ½ tbs
-Water 2 tbs
-Elaichi powder (cardamom powder) ½ tsp
-Pista (Pistachios) chopped as required
-Badam (Almond) chopped as required
Assembling:
-Chandi warq (Edible silver leaf)
-Pista (Pistachios) sliced
-Badam (Almond) sliced
Direction:
Prepare Gajar Jamun:
-Cut carrots into small pieces & add in chopper, add sugar, milk, chop well.
-In a wok, add chopped carrot mixture mix well, cook on medium flame for 2-3 minutes.
-Cover & cook on low flame until carrot tender.
-Add clarified butter, roasted semolina, mix well, add milk, mix well, cook on medium flame for 7-8 minutes or until it dries up, while mixing continuously.
-Add green cardamom powder, mix well, take out & let it cool completely.
-Take carrot mixture, make a smooth ball & set aside (Makes 10-12)
Prepare Rabri Doodh:
-In a wok, add milk, bring it to a boil, then cook on low flame for 8-10 minutes or until milk reduces, stirring in between.
-Add condensed milk, mix well. In a small bowl, add cornflour, water & whisk well, then add in milk gradually, cook on medium flame for 1-2 minutes until thickened.
-Add green cardamom powder, pistachios, almonds, mix well & cook until the desired thickness (3-4) rabri doodh is ready, let it cool completely.
Assembling:
-In a serving dish, add prepared rabri doodh, prepared carrot jamun, garnish with edible silver leaf, pistachios, almonds & serve!

Prepare Carrot Jamun:
-Carrots ko chotay tukron mein kaat kar chopper mein dalein, cheeni aur doodh dalein, achi tarah chop karen.
-Ek wok mein chopped carrot mixture dalein, achi tarah mix karen, medium flame par 2–3 minutes tak pakayen.
-Dhak kar low flame par 5 minutes ya jab tak gajar naram ho jaye, pakayen.
-Ab ghee aur bhuni hui suji dalein, achi tarah mix karen, doodh dalein, phir se mix karen aur medium flame par 7–8 minutes tak lagatar chalate hue pakayen jab tak mixture sookh jaye.
-Sabz elaichi powder dalein, mix karen, nikal kar poori tarah thanda honay den.
-Carrot mixture ke 40g lein, smooth ball bana kar side par rakh den (10-12 bante hain).
Prepare Rabri Milk:
-Ek wok mein doodh dalein, ubal len, phir low flame par 10 minutes tak ya jab tak doodh reduce ho jaye pakayen, darmiyan mein hilate rahen.
-Ab condensed milk dalein, mix karen. Ek chotay bowl mein cornflour aur pani dalein aur achi tarah whisk karen, phir dheere dheere doodh mein dalein, mix karen aur medium flame par 1–2 minute tak pakayen jab tak gaadha ho jaye.
-Sabz elaichi powder, pista aur badam dalein, mix karen, medium flame par 2 minutes tak pakayen, phir flame band karen. Rabri milk tayyar hai, poori tarah thanda honay den.
Assembling:
-Serving dish mein tayyar rabri milk dalein, tayyar carrot jamun dalein, edible silver leaf, pista aur badam se garnish karen aur serve karen!
