Ingredients:
Prepare Galawati Boti Gravy:
-Boneless beef 750g
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Kacha papita (Raw papaya) paste 1 & ½ tbs
-Himalayan pink salt 1 tsp or to taste
-Lemon juice 2 tbs
-Sabut dhania (Coriander seeds) 1 tbs
-Sabut kali mirch (Black peppercorns) 1 tsp
-Saunf (Fennel seeds) ½ tbs
-Badi elaichi (Black cardamom) 1
-Darchini (Cinnamon stick) 1
-Javitri (Mace) 1-inch piece
-Kabab chini (Cubeb pepper) 12-15
-Zeera (Cumin seeds) 1 & ½ tsp
-Laung (Cloves) 2-3
-Hari elaichi (Green cardamom) 4-5
-Badam (Almonds) 7-8
-Kaju (Cashew nuts) 6-7
-Khopra (Desiccated coconut) 1 tbs
-Dahi (Yogurt) ¾ Cup
-Pyaz (Onion) fried ¾ Cup
-Bhunay chanay (Roasted grams) 1 tbs
-Lal mirch powder (Red chili powder) 1 tsp or to taste
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tbs
-Cooking oil ½ Cup
-Water ¼ Cup or as required
-Hari mirch (Green chillies) 2-3
-Hara dhania (Fresh coriander) chopped
-Koyla (Charcoal) for smoke
Prepare Burnt Garlic Rice:
-Ghee (Clarified butter) 3 tbs
-Lehsan (Garlic) finely chopped 2 tbs
-Zeera (Cumin seeds) 1 tsp
-Chawal (Rice) sella 2 Cups (soaked & boiled with salt)
-Hara dhania (Fresh coriander) 1 tbs
-Pyaz (Onion) fried 2 tbs

Directions:
Prepare Galawati Boti Gravy:
-In a bowl,add beef,ginger garlic paste,raw papaya paste,pink salt,lemon juice & mix well,cover & marinate for 30 minutes.
-In small frying pan,add coriander seeds,black peppercorns,fennel seeds,black cardamom,cinnamon stick,mace,cubeb pepper,cumin seeds,cloves,green cardamom & dry roast on low flame until fragrant.
-Let it cool.
-In spice mixer,add roasted spices & grind well.
-Add almonds,cashew nuts,desiccated coconut & pulse for 1-2 times & set aside.
-In the same spice mixer,add yogurt,fried onion,roasted grams,red chili powder,Kashmir red chili powder,grind well & set aside.
-In a wok,add cooking oil,marinated beef & mix well until it changes color.
-Add yogurt & onion paste,mix well & cook on medium flame for 2-3 minutes.
-Add water & mix well,cover & cook on low flame until beef is tender (35-40 minutes).
-Now add ground spices & mix well,cover & cook on low flame for 15-20 minutes.
-Add green chillies & fresh coriander,cover & cook on low flame for 1-2 minutes.
-Give coal smoke for 2 minutes.
Prepare Burnt Garlic Rice:
-In a wok,add clarified butter & let it melt.
-Add garlic & mix well.
-Add cumin seeds,mix well & fry until light golden.
-Add boiled rice & mix well.
-Add fresh coriander,fried onion,mix well & cook on high flame for 1-2 minutes.
-Garnish with fresh coriander & fried onion.
-Serve Galawati boti kabab with burnt garlic rice.
Note:
-If using beef undercut beef, skip papaya paste.
