Ingredients:

-Mutton chops 400g

-Mutton mixed boti 500g

-Himalayan pink salt ½ tbs or to taste

-Lal mirch powder (Red chilli powder) ½ tsp or to taste

-Garam masala powder 1 tsp

-Dhania powder (Coriander powder) 2 tsp

-Haldi powder (Turmeric powder) ¼ tsp

-Zeera (Cumin seeds) roasted & crushed ½ tbs

-Adrak lehsan (Ginger garlic) crushed 1 & ½ tbs

-Lemon juice 2-3 tbs

-Sabut kali mirch (Black peppercorns) 1 tbs

-Laung (Cloves) 5-6

-Badi elaichi (Black cardamom) seeds 1

-Desi ghee (Clarified butter) ¾ Cup

-Hari elaichi (Green cardamom) 2-3

-Darchini (Cinnamon stick) 1

-Zeera (Cumin seeds) 1 tsp

-Tez patta (Bay leaves) 2

-Lehsan (Garlic) sliced 8-10 cloves

-Dahi (Yogurt) whisked 1 Cup

-Pyaz (Onion) fried & crushed 1 Cup

-Water 2-3 Cups

-Olper’s Cream ¾ Cup

-Coconut milk powder 2 tbs

-Hara dhania (Fresh coriander) chopped handful

-Sukhi lal mirch (Dried red chillies) 4-5

-Kali mirch (Black pepper) crushed

-Hara dhania (Fresh coriander) chopped

-Adrak (Ginger) julienne

 

Directions:

-In a bowl,add mutton chops,mutton mixed boti,pink salt,red chilli powder,garam masala powder, coriander powder,turmeric powder,cumin seeds,ginger garlic paste,lemon juice & mix well,cover & marinate for 1-2 hours.

-In mortal & pestle,add black peppercorns,cloves,black cardamom seeds,crush coarsely & set aside.

-In a wok,add clarified butter & let it melt.

-Add green cardamom,cinnamon stick,cumin seeds,bay leaf,garlic & mix well.

-Add marinated mutton,mix well & cook on medium flame until oil separates (8-10 minutes).

-On low flame,add yogurt,fried onion & mix well.

-Add water & mix well,bring it to boil,cover & cook on low flame until meat is tender (40-50 minutes).

-Turn off the flame,add cream,crushed spices,coconut milk powder,fresh coriander,dried red chillies, turn on the flame & mix well,cover & cook on low flame for 4-5 minutes.

-Garnish with black pepper crushed,fresh coriander,ginger & serve!
