Ingredients:

Prepare Mooli (Radish) Filling:

-Mooli (Radish) grated 500g

-Himalayan pink salt 1 & ½ tsp

-Cooking oil 1 tbs

-Mooli ka pattay (Radish leaves) chopped 1 Cup

-Adrak (Ginger) paste 1 tsp

-Lehsan paste (Garlic paste) ½ tbs

-Zeera (Cumin seeds) roasted & crushed 1 tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Ajwain (Carom seeds) crushed ½ tsp

-Haldi powder (Turmeric powder) ½ tsp

-Himalayan pink salt 1 tsp or to taste

-Lal mirch (Red chilli) crushed ½ tsp

-Hara dhania (Fresh coriander) chopped handful

Prepare Dough:

-Adrak (Ginger) 2-inch piece

-Water ¼ Cup

-Himalayan pink salt ½ tbs or to taste

-Cooking oil 1-2 tbs

-Atta (Wheat flour) sifted 3 Cups

-Water 1 Cup or as required

-Cooking oil 1 tsp

-Ghee (Clarified butter) for frying

 

Directions:

Prepare Mooli (Radish) Filling:

-In a bowl,add radish,pink salt,mix well,cover & let it rest for 15 minutes (salt will help draw out moisture from mooli).

-Now squeeze out the radish water from grated radish & transfer it to a pan.

-Turn on the flame,add cooking oil,radish leaves,ginger paste,garlic paste,cumin seeds,red chilli powder,carom seeds,turmeric powder,pink salt,red chilli crushed,fresh coriander,mix well & cook on medium flame for 4-5 minutes & set aside.

Prepare Dough:

-In a grinder,add ginger,water & grind well.

-Strain ginger water (approx. 3 tbs) in the bowl.

-Add pink salt,cooking oil & mix well.

-Add wheat flour & mix well.

-Gradually add water,mix well & knead until dough is formed.

-Grease with cooking oil,cover with cling wrap & let it rest for 15 minutes.

-Knead dough again until smooth,take a small dough (130g),make a ball & sprinkle dry flour & roll out with the help of a rolling pin.

-On a rolled dough,add & spread prepared radish filling,fold one side of the rolled dough,apply water then fold the remaining two sides & make a triangle paratha.

-Heat griddle & fry paratha on medium flame from both sides with clarified butter (makes 5).

-Serve with yogurt raita & pickle.
