-Ajwain (Carom seeds) 1 pinch
-Garam masala powder 1 tsp
-Zeera powder (Cumin powder) ½ tbs
-Jaifil powder (Nutmeg powder) ¼ tsp
-Lemon juice 2 tbs
-Ghee (Clarified butter) ½ Cup
-Pyaz (Onion) sliced 2 medium
-Badiyan ka phool (Star anise) 2
-Sabut kali mirch (Black peppercorns) ¼ tsp
-Darchini (Cinnamon sticks) 2
-Hari elaichi (Green cardamom) 4-5
-Badi elaichi (Black cardamom) 1
-Zeera (Cumin seeds) 1 tsp
-Laung (Cloves) 3-4
-Tamatar (Tomato) sliced 1 large
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Tamatar (Tomato) sliced 1 medium

-Chawal (Rice) sella 500g soaked & boiled until 90% done
-Kali mirch (Black pepper) crushed 1 tsp
-Kewra water/ Biryani essence 1 tsp
-Podina (Mint leaves)
-Orange food color ¼ tsp
-Ghee (Clarified butter) melted 2 tbs
-Hari mirch (Green chillies) 2
Directions:
-In a bowl,add mutton,yogurt,green chilli paste,ginger garlic paste,coriander powder,pink salt,black pepper crushed,mace powder,carom seeds,garam masala powder,cumin powder,nutmeg powder, lemon juice & mix well,cover & marinate for 30 minutes.
-In a cooking pot,add clarified butter & let it melt.
-Add onion & fry on medium flame until golden.
-Add star anise,black peppercorns,cinnamon stick,green cardamom,black cardamom,cumin seeds,cloves & mix well.
-Add tomato,marinated mutton & mix well,cover & cook on low flame until mutton is tender (40-45 minutes) then cook on high flame for 1-2 minutes.
-Add fresh coriander,mint leaves,tomato,green chillies,boiled rice,black pepper crushed,kewra water, mint leaves,orange food color,clarified butter,green chillies,cover with kitchen cloth,lid & steam cook on low flame for 10-15 minutes & serve!

Directions:
-Ek bowl mein mutton,dahi,hari mirch paste,adrak lehsan paste,dhania powder,pink salt,crushed kali mirch,javitri powder,ajwain,garam masala powder,zeera powder,jaifil powder aur lemon juice dal kar achi tarah mix karein aur dhak ker 30 minutes kliya marinate ker lein.
-Cooking pot mein ghee dal ker melt karein.
-Pyaz dal kar medium flame par golden hone tak fry karein.
-Ab is mein badiyan ka phool,sabut kali mirch,darchini,hari elaichi,badi elaichi,zeera aur laung daal kar achi tarah mix karein.
-Tamatar aur marinated mutton dal ker acha tarhan mix karein aur dhak ker halki ancch par 40-45 minutes ya mutton gul janay tak paka lein phir tez ancch per 1-2 minutes kliya paka lein.
-Hara dhania,podina,tamatar,hari mirchein,boiled chawal,crushed kali mirch,kewra water,podina, orange food color,ghee aur hari mirchein dal kar kitchen cloth aur lid se dhak dein aur halki ancch per 10-15 minutes kliya steam cook ker lein & serve karein!
