Ingredients:
-Mutton leg 1 & ½ kg
-Kacha papita paste (Raw papaya paste) 1 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Hari mirch paste (Green chilli paste) 1 & ½ tbs
-Tomato paste 2 tbs
-Dahi (Yogurt) ½ Cup
-Lemon juice 3 tbs
-Kashmiri lal mirch (Kashmiri red chilli) powder ½ tbs
-Chaat masala ½ tsp
-Lal mirch powder (Red chilli powder) 1 tbs or to taste
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch (Red chilli) crushed ½ tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Himalayan pink salt 1 & ½ tsp or to taste
-Pyaz (Onion) rings 1 Large
-Sabut kali mirch (Black peppercorns) ½ tsp
-Hari elaichi (Green cardamom) 3-4
-Darchini (Cinnamon sticks) 2
-Lehsan (Garlic) 1 Bulb
-Olive oil 2-3 tbs
-Tamatar (Tomatoes) blanched 2 medium
-Hara dhania (Fresh coriander) handful
-Hari mirch (Green chillies) 2-3
-Lemon juice 1 tbs
-Sabut dhania (Coriander seeds) 1 tsp
-Zeera (Cumin seeds) ½ tsp
-Himalayan pink salt ½ tsp or to taste
-Lal mirch (Red chilli) crushed ½ tsp
-Lemon slices
Directions:
-Remove fat layer from mutton leg & prick with the help of knife.
-In a bowl,add raw papaya paste,ginger garlic paste,green chilli paste,tomato paste,yogurt,lemon juice, kashmiri red chilli powder,chaat masala,red chilli powder,coriander seeds,turmeric powder,red chilli crushed,cumin seeds,pink salt & mix well.
-Add mutton leg & coat properly,cover with cling film & marinate for 8-10 hours or overnight in refrigerator.
-On a baking tray,place aluminium foil & baking paper.
-Add onion,black peppercorns,green cardamom,cinnamon stick,garlic & olive oil.
-Place marinated mutton leg & wrap in baking paper & aluminium foil properly.
-Bake in preheated oven at 180C for 1 hour.
-After baking,take out mutton leg & remove cinnamon stick & green cardamom.
-Squeeze garlic bulb & transfer it to a blending jar,add blanched tomatoes,fresh coriander,green chillies, lemon juice,coriander seeds,cumin seeds,pink salt,red chilli crushed & blend well.Chutney is ready!
-Place roasted mutton leg on same oven tray with same baking paper & bake in preheated oven at 180C for 15 minutes (on upper grill with fan).
-Serve with prepared chutney & lemon slices.

-Mutton leg sa fat layer remove ker lein aur knife ki madad sa prick ker lein.
-Bowl mein kacha papita paste,adrak lehsna paste,hari mirch paste,tomato paste,dahi,lemon juice, Kashmiri lal mirch powder,chaat masala,lal mirch powder,sabut dhania,haldi powder,lal mirch crushed, zeera aur pink salt dal ker ache tarhan mix ker lein.
-Mutton leg dal ker properly coat ker lein,cing film sa cover karein aur 8-10 hours or overnight refrigerator kliya marinate ker lein.
-Baking tray mein aluminium foil & baking paper rakh dein.
-Pyaz,sabut kali mirch,hari elaichi,darchini,lehsan aur olive oil dal dein.
-Marinated mutton leg rakh dein,baking paper & aluminium foil mein properly seal ker lein.
-Preheated oven mein 180C per 1 hour kliya bake ker lein.
-Baking ka bad mutton leg ko nikal lein,darchini aur hari elaichi ko remove ker lein.
-Lehsan blub ko squeeze ker ka blending jug mein dal dein,blanched tamatar,hara dhania,hari mirchein, lemon juice,sabut dhania,zeera,pink salt aur lal mirch crushed dal ker ache tarhan blend ker lein.Chutney tayyar hai.
-Roasted mutton leg ko us he baking paper per rakh deu aur preheated oven mein 180C per 15 minutes kliya bake ker lein (on upper grill with fan).
-Tayyar chutney aur lemon slices ka saath serve karein!
