Ingredients:
-Cooking oil 1/3 Cup
-Mutton mix boti 1 kg (with 10% fat)
-Adrak (Ginger) crushed 1 tbs
-Lehsan (Garlic) crushed 1 tbs
-Himalayan pink salt 1 tsp or to taste
-Water 2-3 Cups
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Kali mirch powder (Black pepper powder) 1 & ½ tsp
-Hari mirch (Green chilli) crushed 1 tbs
-Dahi (Yogurt) whisked 4 tbs
-Lemon juice ½ tbs
-Adrak (Ginger) julienne 1-inch piece
-Hara dhania (Fresh coriander) chopped 1-2 tbs
-Hari mirch (Green chilli) sliced 1-2
-Hara dhania (Fresh coriander) chopped
-Adrak (Ginger) julienne
-Hari mirch (Green chilli) sliced
Directions:
-In a cast iron pan,add cooking oil & heat it.
-Add mutton,mix well & cook on high flame for 4-5 minutes.
-Add ginger,garlic,pink salt,mix well & cook for 3-4 minutes.
-Add water,mix well & bring it to boil,cover & cook on low flame until meat is tender (35-40 minutes).
-Add coriander seeds,black pepper powder,green chilli,yogurt,mix well & cook on medium flame until oil separates (2-3 minutes).
-Add lemon juice,ginger,fresh coriander,green chilli & mix well.
-Garnish with fresh coriander,ginger,green chill & serve with naan!

-Adrak,lehsan aur pink salt dal ker ache tarhan mix karein aur 3-4 minutes kliya paka lein.
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad dhak dein aur halki ancch per gosht gul janay tak paka lein (35-40 minutes).
-Sabut dhania,kali mirch powder,hari mirch aur dahi dal ker ache tarhan mix karein aur darmiyani ancch per oil alag ho janay tak paka lein (2-3 minutes).
-Lemon juice,adrak,hara dhania aur hari mirch dal ker mix ker lein.
-Hara dhania,adrak aur hari mirch sa garnish ker ka serve karein!
