Restaurant Fried Rice with Tips and Tricks

Ingredients:

-Water 2 litre

-Iodized Himalayan pink salt 2 tsp

-Chawal (Rice) basmati 500g Aromatic long grain rice (washed & soaked for 30 minutes)

-Cooking oil 1 tbs as required

-Boneless chicken small cubes 300g

-Soy sauce 1 tbs

-Iodized Himalayan pink salt ½ tsp or to taste

-Kali mirch (Black pepper) crushed ½ tsp

-Cornflour 1 tsp

-Anday (Eggs) 2

-Iodized Himalayan pink salt 1 pinch or to taste

-Cooking oil 1 tbs

-Cooking oil 1 tbs

-Gajar (Carrot) chopped ½ Cup

-Shimla mirch (Capsicum) chopped ½ Cup

-Band gobhi (Cabbage) chopped 1 Cup

-Cooking oil 1 tbs

-Lehsan (Garlic) chopped 4-5 cloves

-Soy sauce 3 tbs

-Oyster sauce ½ tbs

-Safed mirch powder (White pepper powder) ½ tsp

-Kali mirch (Black pepper) crushed ½ tsp

-Chicken powder 1 tsp

-Iodized Himalayan pink salt ½ tsp or to taste

-Hara pyaz (Spring onion) leaves chopped

 

Directions:

-In a rolling boil water,add pink salt & rice,mix well & boil on high flame for 6 minutes then strain & spread on cheese cloth to stop its cooking,drizzle some cooking oil & mix well.

-Let it cool (as dry as possible).

-In a bowl,add chicken,soy sauce,pink salt,black pepper crushed,cornflour,mix well & set aside.

-In a bowl,add eggs,pink salt,whisk well & set aside.

-In a wok,add cooking oil & heat it.

-Add whisked eggs & mix well until crumbled (10 seconds) & set aside.

-In same wok,add cooking oil & heat it.

-Add marinated chicken,mix well & cook on high flame for 3-4 minutes.

-Add carrot,capsicum,cabbage,mix well & cook on high flame for 30 seconds & set aside.

-In same wok,add cooking oil,garlic & mix well.

-Add half quantity of boiled rice & mix well.

-Add soy sauce,oyster sauce & mix well.

-Add white pepper powder,black pepper crushed,chicken powder & mix well.

-Add pink salt, half quantity of cooked chicken, veggies,& egg ,spring onion,mix well & cook on high flame for 30 seconds & serve!
