Ingredients:

Prepare Spicy Salsa:
-Tamatar (Tomatoes) blanched & peeled 3 large
-Pyaz (Onion) 1 small

-Lehsan (Garlic) 2-3 cloves
-Hari mirch (Green chilli) 1
-Hara dhania (Fresh coriander) handful
-Zeera powder (Cumin powder) 1 tsp
-Himalayan pink salt ½ tsp or to taste
-Kali mirch (Black pepper) crushed ¼ tsp
-Lemon juice 2 tsp
-Olive oil 1 tsp

Prepare Chicken Fajita Filling:
-Cooking oil 1-2 tbs
-Boneless chicken julienne 200g
-Paprika powder 1 tsp
-Lehsan (Garlic) powder ½ tsp

-Dried oregano ½ tsp
-Zeera (Cumin) powder ½ tsp
-Lal mirch (Red chilli) powder ½ tsp or to taste
-Himalayan pink salt ½ tsp or to taste
-Kali mirch (Black pepper) crushed ¼ tsp
-Bareek cheeni (Caster sugar) ¼ tsp
-Lemon juice 2 tsp
-Yellow bell pepper julienne ½ Cup
-Red bell pepper julienne ½ Cup
-Shimla mirch (Capsicum) julienne ½ Cup
-Pyaz (Onion) sliced ½ Cup

Prepare Chicken Fajita Omelet:
-Anday (Eggs) 3
-Cream 1 & ½ tsp
-Himalayan pink salt 1 pinch
-Makhan (Butter) 1 & ½ tbs
-Cheddar & Mozzarella cheese grated as required

 

Direction:

Prepare Spicy Salsa:

-In a chopper,add tomatoes,onion,garlic,green chilli,fresh coriander,cumin powder,pink salt,black pepper crushed,lemon juice,olive oil,chop coarsely & set aside.

Prepare Chicken Fajita Filling:
-In frying pan,add cooking oil,chicken & mix well until it changes color.
-Add paprika powder,garlic powder,dried oregano,cumin powder,red chilli powder,pink salt,black pepper crushed, caster sugar,lemon juice,mix well & cook on medium flame for 2-3 minutes.
-Add yellow bell pepper,red bell pepper,capsicum,onion,mix well & cook for 1-2 minutes.

Prepare Chicken Fajita Omelet:
-In a bowl,add eggs,cream,pink salt & beat for 2-3 minutes.
-In frying pan,add butter & let it melt.

-Add whisked eggs,spread evenly,cover & cook on low flame for a minute.

-Add chicken filling,cheddar & mozzarella cheese & fold both sides,add cheddar & mozzarella cheese,cover & cook on low flame until cheese melts (makes 2 omelets).

-Drizzle salsa & serve with sour cream & sour bread.
