Rice Paper Dumplings

Ingredients:

Prepare Dipping Sauce:

-Soy sauce ¼ Cup

-Sirka (Vinegar) 2 tbs

-Thai red chillies chopped 2

-Hara pyaz (Spring onion) chopped 1 tbs

-Hara dhania (Fresh coriander) chopped 1-2 tbs

-Til ka tel (Sesame oil) ½ tbs

Prepare Garlic Chilli Oil:

-Cooking oil ¾ Cup

-Badiyan ka phool (Star anise) 1

-Darchini (Cinnamon sticks) small 2

-Pyaz (Onion) finely chopped 2 tbs

-Lehsan (Garlic) finely chopped ½ Cup

-Lal mirch (Red chilli) crushed 2 tbs

-Himalayan pink salt ¼ tsp or to taste

-Lal mirch powder (Red chilli powder) 1 tbs or to taste

Prepare Rice Paper Dumplings:

-Chicken qeema (Mince) finely chopped 150g

-Gajar (Carrot) finely chopped ½ Cup

-Hara pyaz (Spring onion) finely chopped ½ Cup

-Mushrooms finely chopped ½ Cup

-Himalayan pink salt ½ tsp or to taste

-Kali mirch powder (Black pepper powder) ½ tsp

-Soy sauce 2 tbs

-Water 2-3 tbs

-Rice papers as required

-Water as required

-Cooking oil 1 tbs

-Water 3-4 tbs

-Til (Sesame seeds)

 

Directions:

Prepare Dipping Sauce:

-In a bowl,add soy sauce,vinegar,thai red chillies,spring onion,fresh coriander,sesame oil & mix well.Dipping sauce is ready!

Prepare Garlic Chilli Oil:

-In a saucepan,add cooking oil,star anise,cinnamon sticks & let them infuse for 5 minutes then remove & discard.

-Add onion,garlic & fry until light golden.

-Remove from flame & let it rest for a minute than add red chilli crushed,pink salt,red chilli powder & mix well.Garlic chilli oil is ready!

Prepare Rice Paper Dumplings:

-In a bowl,add chicken,carrot,spring onion,mushrooms,pink salt,black pepper powder,soy sauce,water & mix until well combined & set aside.

-Cut rice paper in four pieces than soak 2 pieces in water & place them on a flat surface.

-Add 1 tbs of prepared filling in the center,pull up the rice paper making a dumpling (makes 22-24).

-In a frying pan,add cooking oil & spread evenly.

-Add prepared dumplings & fry on low flame for 2-3 minutes.

-Add water,cover & cook on low flame for 5-6 minutes.

-Drizzle dipping sauce,garlic chilli oil,sesame seeds & serve!
