Ingredients:
-Dahi (Yogurt) 500g
-Podina (Mint leaves) dried 14-15
-Pyaz (Onion) 2 medium
-Hari mirch (Green chillies) 4-5
-Taza haldi (Fresh turmeric) ½ inch piece Substitute: Turmeric powder ½ tsp
-Hara dhania (Fresh coriander) handful
-Water ¼ Cup or as required
-Cooking oil 2 tbs
-Ghee (Clarified butter) 3 tbs
-Sabut kali mirch (Black peppercorns) 10-12
-Darchini (Cinnamon sticks) 2
-Hari elaichi (Green cardamom) 2-3
-Badi elaichi (Black cardamom) 1
-Laung (Cloves) 2-3
-Beef mix boti 750g
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Kali mirch (Black pepper) crushed 1 & ½ tsp
-Himalayan pink salt 1 tsp or to taste
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Water 3 Cups or as required
-Hari mirch (Green chillies) 2-3
-Hara dhania (Fresh coriander) chopped
Direction:
-In a bowl,add yogurt,mint leaves (crush with your hands),mix well & set aside.
-In a blending jar,add onion,green chilies,fresh turmeric,fresh coriander with stem,water,blend well & set aside.
-In a pot,add cooking oil,clarified butter & let it melt.
-Add black peppercorns,cinnamon,green cardamom,black cardamom,cloves & mix well.
-Add beef,ginger garlic paste & mix well until it changes color.
-Add coriander seeds,black pepper crushed,pink salt,cumin seeds,mix well & cook on medium flame for 2-3 minutes.
-Add blended paste,mix well and cook until oil separates (8-10 minutes).
-Add water & mix well,bring it to boil,cover & cook on low flame until beef is tender (45-50 minutes).
-Turn off the flame,add prepared mint yogurt & mix well.
-Turn on the flame & cook for 1-2 minutes.
-Add green chillies,cover & cook on low flame for 2 minutes then cook on high flame until oil separates.
-Garnish with fresh coriander & serve!

-Blending jug mein pyaz,hari mirchein,taza haldi,hara dhania aur pani dal ker ache tarhan blend ker lein & side per rakh dein.
-Pot mein cooking oil aur ghee dal ker melt ker lein.
-Sabut kali mirch,darchini,hari elaichi,badi elaichi aur laung dal ker ache tarhan mix ker lein.
-Beef aur adrak lehsan paste dal dein aur rang tabdeel ho janay tak ache trahan mix ker lein.
-Sabut dhania,kali mirch crushed,pink salt aur zeera dal ker ache tarhan mix karein aur darmiyani ancch per 2-3 minutes kliya paka lein.
-Blended paste dal ker ache tarhan mix karein aur oil alag ho janay tak paka lein (8-10 minutes).
-Pani dal ker ache tarhan mix karein aur ubal anay ka bad halki ancch per beef gul janay tak paka lein (45-50 minutes),agar zarorat hou tou mazeed pani shamil ker lein.
-Chulha bund ker dein aur tayyar mint yogurt dal ker ache tarhan mix ker lein.
-Chulha on karein aur 1-2 minutes kliya paka lein.
-Hari mirchein dal ker dhak dein aur halki ancch per 2 minute kliya paka lein phir tez ancch per oil alag ho janay tak paka lein.
-Hara dhania sa garnish ker ka serve karein!
