Ingredients:
Prepare Chicken Seekh Kabab:
-Boneless chicken cubes 800g
-Pyaz (Onion) grated & squeezed 1 large
-Hari mirch (Green chillies) 2-3
-Lehsan (Garlic) cloves 4-5
-Adrak (Ginger) 1-inch piece
-Lal mirch powder (Red chilli powder) 1 tsp or to taste
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Lal mirch (Red chilli) crushed 1 tbs
-Himalayan pink salt 1 tsp or to taste
-Garam masala powder 1 tsp
-Hara dhania (Fresh coriander) handful
-Podina (Mint leaves) handful
-Ghee (Clarified butter) 2 tbs
Prepare Creamy Sauce Mixture:
-Dahi (Yogurt) 1 Cup
-Sabut dhania (Coriander seeds) crushed 1 tbs
-Kali mirch powder (Black pepper powder) ½ tsp
-Himalayan pink salt ½ tsp or to taste
-Garam masala powder 1 tsp
-Zeera (Cumin seeds) roasted & crushed ½ tbs
-Adrak (Ginger) 1-inch piece
-Lehsan (Garlic) 3-4 cloves
-Hari mirch (Green chillies) 2-3
-Lemon juice 2 tbs
-Olper’s Cream 150ml (room temperature)
-Water ½ Cup or as required
-Hara dhania (Fresh coriander) 1-2 tbs
-Podina (Mint leaves) 8-10 leaves
Prepare Tawa Kabab:
-Cooking oil 3-4 tbs
-Hara dhania (Fresh coriander) chopped handful
-Hari mirch (Green chillies) sliced 1-2
-Hara dhania (Fresh coriander) chopped handful
-Hari mirch (Green chillies) sliced 1-2
-Hara dhania (Fresh coriander) chopped
-Hari mirch (Green chillies) sliced
Directions:
Prepare Chicken Seekh Kabab:
-In a chopper,add chicken,onion,green chillies,garlic,ginger,red chilli powder,coriander seeds,cumin seeds,red chilli crushed,pink salt,garam masala powder,fresh coriander,mint leaves,clarified butter & chop well & refrigerate for 30 minutes.
-Grease hand with oil,take a mixture (50g) & make kababs on wooden skewers.
-In a pot,heat water,place steamer grill & kababs,cover & steam cook on low flame for 8-10 minutes.
-Let them cool completely.
-Can be stored in an airtight container for up to 1 month in freezer (makes 18-20).
Prepare Creamy Sauce Mixture:
-In a jug,add yogurt,coriander seeds,black pepper powder,pink salt,garam masala powder,cumin seeds, ginger,garlic,green chillies,lemon juice,cream,water,fresh coriander,mint leaves,blend well & set aside.
Prepare Tawa Kabab:
-In a large griddle,add cooking oil & fry steamed cooked kababs (10 kababs) on medium flame from all sides until golden than cut all the kababs in 1-inch pieces & cook for a minute.
-Add half quantity of prepared creamy sauce mixture,fresh coriander,green chilli,mix well & cook on medium flame for 4-5 minutes.
-Now add remaining creamy sauce mixture,mix well & cook on high flame until oil separates (2-3 minutes).
-Sprinkle fresh coriander & green chilli.
-Garnish with fresh coriander,green chilli & serve with naan!

-Chopper mein chicken,pyaz,hari mirchein,lehsan,adrak,lal mirch powder,sabut dhania,zeera,lal mirch crushed,pink salt,garam masala powder,hara dhania,podina aur ghee adal ker ache tarhan chop ker lein aur 30 minutes kliya refrigerate ker lein.
-Haath ko oil sa grease karein,mixture (50g) lein aur wooden skewer per kabab bana lein.
-Pot mein pani garam karein,steamer grill aur kababs rakh dein aur dhak ker halki ancch per 8-10 minutes kliya steam cook ker lein.
-Thanda ker lein.
-Airtight container mein dal ker 1 month kliya freezer mein store ker saktay han (makes 18-20).
Prepare Creamy Sauce Mixture:
-Jug mein dahi,sabut dhania,kali mirch powder,pink salt,garam masala powder,zeera,adrak,lehsan,hari mirchein,lemon juice,cream,pani,hara dhania aur podina dal ker ache tarhan blend ker lein & side per rakh dein.
Prepare Tawa Kabab:
-Large tawa per cooking oil dal dein aur steamed cooked kababs (10 kababs) ko darmiyani ancch per tamam sides sa golden ho janay tak fry ker lein phir kabab ko 1-inch pieces mein cut ker lein aur ek minute kliya paka lein.
-Tayyar creamy sauce mixture ki half quantity,hara dhania aur hari mirch dal ker ache tarhan mix karein aur darmiyani ancch per 4-5 miutes kliya paka lein.
-Ab remaining creamy sauce mixture dal ker ache tarhan mix karein aur tez ancch per oil alag ho jay tak paka lein (2-3 minutes).
-Hara dhania aur hari mirch dal dein.
-Hara dhania aur hari mirch sa garnish ker ka naan ka saath serve karein.
