Ingredients:
Prepare Spicy Chicken Roast:
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Paprika powder 1 tbs
-Iodized Himalayan pink salt ½ tbs or to taste
-Zeera powder (Cumin powder) 1 tbs
-Mixed herbs 1 tsp
-Lal mirch (Red chilli) crushed 1 & ½ tbs
-Kali mirch (Black pepper) crushed 1 tsp
-Chicken powder 1 tsp
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Pyaz (Onion) finely chopped 1 small
-Hari mirch (Green chillies) finely chopped 2-3
-Lehsan (Garlic) finely chopped 8-10 cloves
-Mustard paste 1 tbs
-Hara dhania (Fresh coriander) chopped handful
-Cooking oil 2 tbs
-Whole chicken washed & pat dried approx. 1.3 kg
Prepare Garlic Rice:
-Olive oil 4 tbs
-Lehsan (Garlic) finely chopped 3 tbs
-Onion powder ½ tsp
-Paprika powder 1 tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Lal mirch (Red chilli) crushed 1 tsp
-Zeera powder (Cumin powder) 1 tsp
-Chicken stock 3 & ½ Cups (1 chicken cube dissolve in 3 & ½ cups of water)
-Chawal (Rice) sella 500g washed & soaked for 2 hours
-Lehsan (Garlic) fried 1 tbs
-Fresh parsley chopped 1 tbs
-Lehsan (Garlic) fried
-Fresh parsley chopped
-Pyaz (Onion) rings
-Roasted veggies (Green chilli,Tomato,Onion)
Directions:
Prepare Spicy Roast Chicken:
-In a bowl,add cumin seeds,paprika powder,pink salt,cumin powder,mixed herbs,red chilli crushed,black pepper crushed,chicken powder,coriander seeds,onion,green chillies,garlic,mustard paste,fresh coriander, cooking oil & mix well.
-Wash and pat dried whole chicken.
-Upside whole chicken & remove backbone of chicken with the help of scissor & flatten it
-Apply marinade & rub evenly on both sides of,cover & marinate for 2-4 hours.
-On baking tray (greased & lined with baking paper),place whole chicken with margination.
-Bake in preheated oven at 180°C for 60 minutes (on both grills).
Prepare Garlic Rice:
-In a pot,add olive oil,garlic & sauté for 30 seconds.
-Add onion powder,paprika powder,pink salt,red chilli crushed,cumin powder & mix well.
-Add chicken stock,mix well & bring it to boil.
-Add rice,mix well & cook on high flame until water is reduced,cover & steam cook on low flame for 10-12 minutes.
-Add fried garlic,fresh parsley & mix well.
-In a serving platter,add garlic rice,spicy chicken roast ,fried garlic,fresh parsley,onion rings,roasted veggies & serve!
