Ingredients:
-Water as required
-Himalayan pink salt ½ tbs
-Sirka (Vinegar) 3 tbs
-Chicken tikka pieces 5
-Cooking oil ½ Cup or as required
-Dahi (Yogurt) 1 Cup
-Adrak lehsan paste (Ginger garlic paste) 2 tbs
-Lemon juice 2 tbs
-Lal mirch powder (Red chilli powder) 1 tbs or to taste
-Zeera (Cumin seeds) roasted & crushed 1 tbs
-Garam masala powder 1 tsp
-Haldi powder (Turmeric powder) 1 tsp
-Chaat masala 1 tbs
-Sabut dhania (Coriander seeds) crushed 2 tbs
-Lal mirch (Red chilli) crushed 2 tsp
-Tatri (Citric acid) ¼ tsp (optional)
-Zarda ka rang (Orange food color) ¼ tsp
-Himalayan pink salt ½ tsp or to taste
-Water as required
-Darchini (Cinnamon sticks) 3-4
-Laung (Cloves) 4-5
-Kali mirch (Black peppercorns) ½ tsp
Prepare Tamarind Green Sauce (Imli ki Hari Chutney):
-Podina (Mint leaves) handful
-Hara dhania (Fresh coriander) handful
-Lehsan (Garlic) cloves 6-7
-Hari mirch (Green chillies) 3-4
-Zeera (Cumin seeds) 1 tsp
-Himalayan pink salt ½ tsp or to taste
-Sugar 1 tsp
-Kala namak (Black salt) 1 tsp
-Imli pulp (Tamarind pulp) 4 tbs
-Water 2-3 tbs or as required
Directions:
-In a large dish,water,pink salt,vinegar & mix well.
-Make deep cuts on tikka pieces & let them soak in salty water for 30 minutes then strain
& pat dry chicken pieces & set aside.
-In a frying pan,add cooking oil & fry chicken tikka pieces on medium flame from both sides until light golden & set aside.
-In a dish,add yogurt,ginger garlic paste & lemon juice.
-In a bowl,add red chilli powder,cumin seeds,garam masala powder,turmeric powder,chaat masala, coriander seeds,red chilli crushed,citric acid,orange food color,pink salt & mix well.
-Now add prepared spice mix in the yogurt,mix well & reserve 1-2 tbs of spice mix later use.
-Add chicken tikka pieces & coat well,cover with cling wrap & marinate for 2 hours.
-In a pot,add water & heat it.
-Add cinnamon sticks,cloves,black peppercorns & mix well.
-Place a steamer,spread butter paper & place marinated chicken tikka pieces on it.
-Sprinkle reserved spice mix,cover & steam cook on low flame for 40-50 minutes.
Prepare Tamarind Green Sauce (Imli ki Hari Chutney):
-In blending jug,add mint leaves,fresh coriander,garlic,green chillies,cumin seeds,pink salt,sugar,black salt,tamarind pulp,water & blend well.
-Serve steam chicken with rice,garlic naan,french fries & tamarind green sauce!

-Hari mirch (Green chillies) 3-4
-Zeera (Cumin seeds) 1 tsp
-Himalayan pink salt ½ tsp or to taste
-Sugar 1 tsp
-Kala namak (Black salt) 1 tsp
-Imli pulp (Tamarind pulp) 4 tbs
-Water 2-3 tbs or as required
Directions:
-Large dish mein pani,pink salt aur sirka dal ker ache tarhan mix ker lein.
-Tikka pieces mein deep cuts laga lein aur salty water mein 30 minutes kliya soak ker lein phir strain ker ka chicken pieces ko pat dry ker ka side per rakh dein.
-Frying pan mein cooking oil dal dein aur chicken tikka pieces ko darmiyani ancch per dono sides sa light golden ho janay tak fry ker lein & side per rakh dien.
-Dish mein dahi,adrak lehsan psate aur lemon juice dal dein.
-Bowl mein lal mirch powder,zeera,garam masala powder,haldi powder,chaat masala,sabut dhania,lal mirch crushed,tatri,zarda ka rang aur pink salt dal ker ache tarhan mix ker lein.
-Ab tayyar spice mix ko dahi mein dal ker ache tarhan mix karein aur 1-2 tbs spice mix ko bad mein use kernay kliya side per rakh dein.
-Chicken tikka pieces dal ker ache tarhan coat ker lein aur cling wrap sa cover ker ka 2 hours kliya marinate ker lein.
-Pot mein pani dal ker garam karein.
-Darchini,laung aur sabut kali mirch dal ker ache tarhan mix karein.
-Steamer rakh ker butter paper laga lein aur marinated chicken tikka pieces rakh dein.
-Reserve spice mix dal dein aur dhak ker halki ancch per 40-50 minutes kliya steam cook ker lein.
Prepare Tamarind Green Sauce (Imli ki Hari Chutney):
-Blending jug mein podina,hara dhania,lehsan,hari mirchein,zeera,pink salt,cheeni,kala namak,imli pulp aur pani dal ker ache tarhan blend ker lein.
-Steam chicken ko chawal,garlic naan,french fries & imli ki hari chutney ka saath serve karein!
