Ingredients:
Prepare Chicken Broth:
-Cooking oil ½ tsp
-Pyaz (Onion) small 2 (cut in half)
-Adrak (Ginger) slices 3-4
-Chicken with skin 500g
-Water 2 litres
-Himalayan pink salt ½ tbs or to taste
-Hara dhania (Fresh coriander) or Cilantro handful
-Darchini (Cinnamon sticks) 2 large
-Badiyan ka phool (Star anise) 2-3
-Laung (Cloves) 8-10
-Rice noodles as required
-Hot water as required
Assembling:
-Hara pyaz (Spring onion) chopped
-Hara dhania (Fresh coriander) or Cilantro handful
-Fresh bean sprouts handful
-Fresh basil leaves 5-6
-Lime slices 2
-Red chilli sliced
-Sriracha sauce or Fish sauce or Hoisin sauce
Directions:
Prepare Chicken Broth:
-Grease frying pan with cooking oil.
-Add onion,ginger & roast from both sides until lightly charred & set aside.
-In a pot,add chicken,water & bring it to boil.
-Remove the scum,add pink salt & mix well.
-In a bouquet garni,add roasted onion,ginger,fresh coriander,cinnamon sticks,star anise,cloves & tie to make a knot.
-In pot,add prepared bouquet garni & mix well,cover & let it simmer on low flame for 1-2 hours or until chicken is cooked through & broth is flavorful.
-Turn off the flame,remove & discard bouquet garni.
-Takeout cooked chicken pieces,let it cool,debone chicken pieces & shred meat,set aside & reserve prepared broth for later use.
-In a bowl,add rice noodles,hot water & let them soak for 6-8 minutes then strain.
Assembling:
-In a serving bowl,add rice noodles,spring onion,shredded chicken,fresh coriander,bean sprouts,fresh basil leaves,lime slices & prepared flavor ful broth.
-Garnish with red chilli,sriracha sauce & serve!

-Pyaz aur adrak rakh dein aur dono sides sa lightly charred ho janay tak roast ker lein & side per rakh dein.
-Pot mein chicken aur pani dal ker ubal lein.
-Scum ko remove ker lein aur pink salt dal ker ache tarhan mix ker lein.
-Bouquet garni mein roasted pyaz,adrak,hara dhania,darchini,badiyan ka phool aur laung dal dein aur tie ker ka knot bana lein.
-Pot mein bouquet garni dal ker ache tarhan mix karein aur halki ancch per 1-2 hours kliya simmer cook ker lein.
-Chulha bund ker dein aur bouquet garni ko nikal ker discard ker dein.
-Tayyar cooked chicken pieces ko nikal ker thanda ker lein aur debone ker ka meat ko shred ker lein aur side per rakh dein aur tayyar broth ko bad mein use kernay kliya side per rakh dein.
-Bowl mein rice noodles aur garam pani dal dein aur 6-8 minutes kliya bheego dein phir strain ker lein.
Assembling:
-Serving bowl mein rice noodles,hara pyaz,shredded chicken,hara dhania,bean sprouts,fresh basil leaves, lime slices & tayyar flavor ful broth dal dein.
-Red chilli aur sriracha sauce dal ker serve karein!
