Ingredients:
-Zeera (Cumin seeds) ½ tbs
-Khashkhash (Poppy seeds) cleaned & washed 1 tbs
-Sabut dhania (Coriander seeds) 1 tbs
-Kabab Cheeni (Cubeb pepper) 7-8
-Sabut kali mirch (Black peppercorn) ½ tsp
-Hari elaichi (Green cardamoms) 3-4
-Laung (Cloves) 4-5
-Darchini (Cinnamon stick) 1
-Javitri (Mace) 1 blade
-Badi elaichi (Black cardamom) 1
-Bhunay chanay (Roasted Gram) 1 tbs
-Jaifal (Nutmeg) ¼ piece
-Kashmiri lal mirch (Kashmiri red chilli) powder 1 tbs
-Iodized Himalayan pink salt 1 & ½ tsp or to taste
-Pyaz (Onion) fried & crushed 3 tbs
-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tbs
-Cream ¼ cup
-Dahi (Yogurt) Thick ¼ Cup
-Sarson ka tel (Mustard oil) ¼ Cup
-Lemon juice 1 tbs
-Boneless Beef 1 kg
-Kacha papita (Raw papaya) paste 1 tbs
-Koyla (Charcoal) as required
Direction:
-In a pan, add cumin seeds, poppy seeds, coriander seeds, kabab cheeni, black pepper powder, green cardamom, cloves, cinnamon stick, mace, black cardamom, roasted grams, nutmeg, dry roast on low flame until fragrant.
-Let it cool down completely & transfer it to a grinder.
-Add, kashmiri red chilli powder, pink salt, fried onion, grind well, bihari malai boti spice mix is ready, set aside.
-In a bowl, add prepared bihari malai boti spice mix, ginger garlic paste, cream, thick yogurt, mustard oil, lemon juice, whisk well.
-Add boneless beef, papaya paste, mix well, cover & marinate for 6-8 hours or overnight.
-Remove cover, thread 6-7 bihari malai beef boti on a skewer. (Makes 6-7 skewer)
-Grill on charcoal for 8-10 minutes by moving the skewer, brush oil in between.
-Serve with puri paratha, onion rings, raita & salad!
