Ingredients:

-Cooking oil 2-3 tbs

-Pyaz (Onion) chopped 2 medium

-Adrak lehsan paste (Ginger garlic paste) 1 & ½ tsp

-Lal mirch powder (Red chilli powder) 1 tsp or to taste

-Zeera powder (Cumin powder) 1 tsp

-Kali mirch (Black pepper) powder 1 tsp

-Haldi powder (Turmeric powder) ¼ tsp

-Himalayan pink salt 1 tsp or to taste

-Garam masala powder ½ tsp

-Water 2-3 tbs or as required

-Olper’s Cream ½ Cup

-Anday (Eggs) boiled 6

-Hara dhania (Fresh coriander) chopped handful

-Maida (All-purpose flour) 2 tbs

-Water 2 tbs

-Samosa sheets as required

-Cooking oil for frying

 

Direction:

-In a fryin pan,add cooking oil,onion & sauté until translucent.

-Add ginger garlic paste,red chilli powder,cumin powder,black pepper powder,turmeric powder,pink salt, garam masala powder & mix well.

-Add water,mix well & cook for 1-2 minutes.

-Turn off the flame,add cream & mix well.

-Add eggs (grate with the help of a grater) & fresh coriander.

-Turn on the flame,mix well & cook on medium flame for 1-2 minutes.

-Let it cool.

-In a small bowl,add all-purpose flour,water & whisk well.Flour slurry is ready!

-Take a samosa sheet & cut thin strips on one side with the help of a cutter.

-Apply flour slurry,make a pocket,add prepared filling in the center & fold into the shape of samosa & seal corners with flour slurry (makes 20-24).

-In a wok,heat cooking oil & fry on medium flame until golden & crispy.

-Air fry at 180C for 10-12 minutes (flip in between).

-Serve with tomato ketchup.
