Ingredients:
Prepare Lauki Bhujiya:
-Cooking oil 3-4 tbs
-Pyaz (Onion) sliced 1 medium
-Lehsan (Garlic) finely chopped 1 tbs
-Curry patta (Curry leaves) 10-12
-Zeera (Cumin seeds) 1 tsp
-Hari mirch (Green chillies) 3-4
-Lauki (Bottle gourd) small cubes 500g
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Sabut dhania (Coriander seeds) roasted & crushed 1 tbs
-Lal mirch (Red chilli) crushed ½ tsp
-Garam masala powder ½ tsp
-Iodized Himalayan pink salt ½ tsp or to taste
-Lemon juice 1 tbs
-Hara dhania (Fresh coriander) chopped
Prepare Easy Tadka Daal:
-Masoor daal (Red lentil) soaked ½ Cup
-Moong daal (Yellow lentil) soaked ½ Cup
-Tamatar (Tomato) chopped 1 & ½ Cup
-Adrak lehsan paste (Ginger garlic paste) 1 tsp
-Haldi powder (Turmeric powder) ½ tsp
-Lal mirch powder (Red chilli powder) ½ tsp or to taste
-Dhania powder (Coriander powder) ½ tsp
-Water 3 Cups
-Water ½ Cup or as required
-Iodized Himalayan pink salt ½ tsp or to taste
Prepare Tadka:
-Cooking oil ¼ Cup
-Pyaz (Onion) chopped 1 small
-Lehsan (Garlic) chopped 1 tbs
-Zeera (Cumin seeds) 1 tsp
-Sabut lal mirch (Button red chillies) 3-4
Prepare Green Coconut Chutney:
-Podina (Mint leaves) handful
-Hara dhania (Fresh coriander) handful
-Lehsan (Garlic) cloves 2-3
-Hari mirch (Green chillies) 2-3
-Khopra (Desiccated coconut) 3 tbs
-Bareek cheeni (Caster sugar) ½ tbs
-Iodized Himalayan pink salt ½ tsp or to taste
-Lemon juice 2-3 tbs
-Cooking 1 tsp
-Water ¼ Cup or as required
Assembling:
-Zeera rice
-Salad
-Papad
-Desi ghee (Clarified butter) 2 tbs
Directions:
Prepare Lauki Bhujiya:
In a wok,add cooking oil,onion,garlic & fry for a minute.
-Add curry leaves,cumin seeds,green chillies,mix well & fry until light golden.
-Add bottle gourd & mix well.
-Add turmeric powder,red chilli powder,corinader seeds,red chilli crushed, garam masala powder,pink salt & mix well,cover & cook on low flame for 20-25 minutes.
-Add lemon juice,fresh coriander,mix well & cook for a minute.
Prepare Easy Tadka Daal:
-In a pot,add red lentil,yellow lentil,tomato,ginger garlic paste,turmeric powder,red chilli powder, coriander powder,water,mix well & bring it to boil,cover & cook on low flame until tender (20-25 minutes) then mash well with the help of masher.
-Add water,pink salt,mix well & cook for 1-2 minutes.
Prepare Tadka:
-In a tadka pan add cooking oil,onion,garlic & fry for a minute.
-Add cumin seeds,button red chillies,mix well & fry until golden.
-Now pour tadka in daal,mix well & serve!
Prepare Green Coconut Chutney:
-In bending jug,add mint leaves,fresh corinader,garlic,green chillies,desiccated coconut,caster sugar,pink salt,lemon juice,cooking oil,water & blend well.
Assembling:
-In a serving bowl,add zeera rice,daal,lauki bhujiya,salad,green coconut chutney,papad,clarified butter & serve!
